White Wine Coq Au Vin

The hubby and I went out on the town on Friday evening.  We went for dinner to a new restaurant, where I ordered the Bee Bim Bop with a side of kimchi.  

We then went to "The Adjustment Bureau", which was decent, but not great.

I hopped out of bed on Saturday morning at 7:50 with boundless energy!  I made some tropical oatmeal for breakfast while the husband slept on.


My sister and I went shoe shopping Saturday afternoon to look for bridesmaid shoes for her wedding.  
I love them, and am so excited to wear them!!

 

Lunch was French onion soup, and for dinner we picked up subs.  I had a turkey sub loaded with veggies and honey mustard.


This evening I made a wonderful (and easy) dinner that I will definitely be making again.

White Wine Coq Au Vin

5 T flour
1 tsp dried parsley
1 tsp dried basil
3/4 tsp salt
1/2 tsp fresh ground pepper (plus more to taste)
6 chicken thighs (chopped into bite size pieces)
5 slices bacon (chopped)
2 cups chopped potatoes
3 chopped carrots 
3 chopped stocks of celery
1 chopped onion
2 cups chicken broth
1 1/3 cup dry white wine 

Mix first 5 ingredients in a large bowl.  Toss the chicken in the flour mixture.  Cook the chopped bacon in a small stock pot until done.  Remove and set aside.   Cook the floured chicken in the bacon fat for approx. 6 minutes.  Remove chicken and set aside.  Throw onions, carrots, potatoes and celery in the pot and cook until onions are translucent (deglaze with a bit of the chicken broth if sticking/ or add oil).  Add broth and wine and bring to a boil.  Reduce and simmer for about 20 minutes or desired thickness.  Season to taste.

This would be perfect with some crusty bread.  
It was warm, comforting, and very easy for a quick Monday dinner.

I haven't seen that movie. I've really been one to go see more action/drama movies actually. Well, I USED to a long time ago. But now I'm just all about something funny or silly...a.k.a "stupid"...;)

I'd kind of like to see "Just Go With It" but I know it probably doesn't justify the cost.

i've never made coq au vin! but in general, I usually cook with white wine. It has a 'lighter' flavor

Haven't see The Adjustment Bureau - it seemed like a "renter" to me. Have never made coq au vin, but yours looks delicious. We did go see Rango on Saturday - it was meh. I spent a lot of the weekend sleeping and trying to get over my illness.

Those Tropical Oats look so freakin' good... My Mum only ever made Coq Au Vin with red wine but I bet the white would be a fun change!

Thsoe are really cute shoes! All the bridesmaid shoes i've ever had were hideous, haha.

I have never had coq au vin but it's something I would love to make some day - and I am sure I will. On a week night, though? Eeks, not a chance! I am very impressed by all of your meals, but esp your week night ones!!

I've always wanted to make coq au vin! But I think I would prefer to red wine...just to get a taste of the original.
