Those who have been reading my blog for a while will know that I LOVE grapefruits. Costco understands my obsession as they sell giant grapefruits in giant bags.
I have had one every night this week.
Breakfast has been leftover wifesaver, and lunch leftovers as well (pizza Wednesday, soup today) as well as a babybel cheese (from Costco of course) and an orange or yogurt.
On class days I often need a quick, easy and delicious dinner (Costco understands this).
Last night I made a quick and easy Costco dinner - chicken cordon bleu and rice.
This evening I made a tofu and veggie stir-fry.
Tomorrow night is my staff Christmas party. I made a delicious and easy dessert to take along that I will post about this weekend :-)

Water chestnuts are my favorite stir fry ingredient, too!!! They are the reason I ate stir fries when I was younger. Love the crunch.
I would shop at costco with my parents. My purchases? Books. They always have incredible prices on their books.
I love, love, LOVE water chestnuts... tho I don't think that is very common. Broccoli is great in stir-frys too, because they soak up so much of the sauce :-)
And my favorite thing from Costco is the Kirkland Trail Mix with the M&Ms in it... I'd seriously buy a membership for that, and that alone.

Costco and I are buddies! :P I buy everything there, depending on what produce is in season and in stock! :) SO good. They don't need to pay me to sing their praises.
Gonna grade papers over the weekend. Love water chestnuts, too. Regular Costco purchases: mineral water, coffee. Gotta get the bulk coffee...
I WISH we had Costco! We only have Sam's Club, and I know it's not as good :-(
I'm totally jealous of your stir-fry - it looks incredible! I've always been a water chestnut and baby corn lover...but bamboo shoots are a close second (third?)
I love me some costco, cheap bags of avocados and grapefruits are the best!
Costco is too far from my house, but I do belong to BJ's! I've heard Costco is much better though-I wish they had one closer to me!
We don't have Costco's here. It's sad.
I've never been to a CostCo, but I'm eager to try one out! The closest one to me is about 2 hours away. I'm trying to find a free one-day pass to get in before committing to a membership.
My fave stirfry ingredient is either those mini corns or sugar snap peas. Mmm.. I love me some stir fry!

I ADORE Costco! My favorite thing there is their chocolate-covered almonds. Have you ever tried them? They are fantastic. I also love their dry-roasted almonds. I guess you can say while your obsession is grapefruit, my is almonds. ;-)
Also, I finally made your AMAAZING Irish Oatmeal bread!! I love it, Jolene! I tweaked it a bit since I don't have whole wheat or quick oats, but they turned out awesome.
It's been a while since I last made a stir fry but my favourite ingredient is definitely broccoli :)
I haven't been to Costco in FAR too long! I need to go back soon! One of my favorite purchases is this HUGE thing of green tea they sell. When you drink as much tea as I do, it's a life saver!
