Banana Softserve Vegan Overnight Oats


Angela is a genius.


VOO are so good and incredible easy to make. I prepped the oat mixture last night, and then layered it with banana soft serve (1 frozen banana done in a food processor) this morning.



Vegan Overnight Oats
(From: OhSheGlows)


- 1/3 cup oats
- 1 cup almond milk (I used unsweetened vanilla almond breeze) - I would also cut this amount to 3/4 cup next time or increase the amount of oats.
- 1/2 tsp pure vanilla extract
- 1 T chia seeds
- 1 package of Amazing Grass (Chocolate)

Mix all the ingredients with a whisk and refrigerate overnight. In the morning layer it with the banana soft serve (food process a frozen banana).



At work I had about 8 tortilla chips with dip.

Lunch was rice with hot sauce, edamame, and 2 clementines (I didn't eat the apple).







Dinner was salmon, rutabagas, asparagus and a piece of pumpernickel.





Salmon with veggies is one of my favourite summery meals, although it is not feeling very summery. Today was a windy, cold, sleety day.

The current conditions are:

Light Snow
45K/h wind
Feels like -5

Brutal.

Tomorrow is looking even worse. Snow. Not light snow, but SNOW. Barf.

This evening the hubby and I went to our friend's house for a game night. We played a nerdy card game called Bang! I love board games, card games, etc.. I never get sick of them.

What is your favourite board/ card game?

Also, have you ever made rutabagas? What are some other ways to prepare them besides boiling and mashing?

Obviously I love Texas Hold'em but in the spirit of your game night I love playing pinochle and progressive rummy with my family.

I've only had rutabagas boiled but last time I did it was in a risotto.

Those oats look incredible! My favorite card game is probable Uno..just because I have played it with my daddy since I was little. It reminds me of him :) I have no idea what a rutabagas is!!

I have to try this banana soft serve I keep hearing about. It looks so good. I am a fan of most board games, but love monopoly and clue. For card games, I think crazy 8 is a fun one people often forget to play. For 4, I'd say spades is good.

I've recently re-discovered my love for card games like Canasta and Cribbage. I always think I don't like playing games with people until I do it. And have fun.

I think the reason the brownies I made were so moist is because there's no flour in them. To be honest, if I were to make them again I would probably throw in another T of cocoa powder and just a mere 1/2 cup or so flour because they wee a bit squishy. But so good.

I never thought about growing peas, and that is a perfect idea! Thank you for the suggestion, I will be sure to added it in my garden.

We are getting tons of snow/sleet in Edmonton - so yucky! Thanks for the information on Saskatoon. I'm pretty excited to go.

I have never had a rutabaga but I sure would love to try one. Maybe it could be diced and backed with a olive oil, salt and pepper.

my favorite game is definitely Taboo... it's a great game for groups... never made rutabaga..the vegan oats look really good..

My food processor is a slacker and can't manage soft serve bananas..obviously, this upsets me quite a bit.

1. Scattegories. Although I made my own game like a total cheap-o and we found out later I got some of the rules a bit wrong.

Never had rutabagas...they look like potatoes?? I love starchy veggies though!

Fav card game is probably uno. It's so classic and simple.
