Vegetarian Meal #10 of 10

My goal was to make 10 new vegetarian recipes in October. Yes, this last one is in November, but I had to start prepping it on Saturday October 31st, so it still counts :-)

In case you missed the first 9 vegetarian recipes:

1) Sweet Potato Burritos (Protein = Red Kidney Beans)

2) Lentil Mushroom Mousakka (Protein = Red Lentils)

3) Mexican Risotto (Protein = Black Beans)

4) Coconut Curry Tofu (Protein = Tofu)

5) Bulgur and Tofu Stuffed Peppers with Tabouli Salad (Protein = Bulger and a little Tofu)

6) Zucchini Lasagna (NO noodles) (Protein = Hemp Seeds)

7) Indian Curry with Chickpeas and Mango (Protein = Chickpeas)

8) Red Tofu and Bean Chili (Protein = Kidney Beans, Black Beans, Tofu)

9) Curried Lentil Soup (Protein = Lentils)

And today #10 of 10 is Soy Bean Balls (Protein = Yellow Soy Beans)

I tried to make a variety of different vegetarian, complete meals with varying sources of protein. I also did not make any pasta - which I think is far too often a fall back "veggie" dish.

Before I get to the recipe, here are my eats from today ...

Breakfast: I mixed 1 cup of 100% OJ with 1 banana and 1/3 cup frozen blueberries.



Then I added this:



The nutritional stats truly are AMAZING:
- 110 Calories
- 6g fibre
- 13g carbs
- 80% RDA Vitamin A
- 40% RDA Vitamin C
- 40% RDA Vitamin K
- 16% RDA Riboflavin
- 10% RDA Iron
- PLUS MUCH MUCH MORE!!

Lunch: Terriyaki Chicken frozen entree, an apple, and a Babybel cheese with H2O (all packed up in a grocery bag):



Dinner: Vegetarian Recipe #10 of 10

Soy Bean Balls


Dinner was made over 3 days!

Saturday October 31st (STEP 1) - Soak 100g of yellow soy beans in water overnight
Sunday November 1st (STEP 2) - Drain the soybeans and cook in a large pot of water for about 3 hours. Drain and cool.

- When ready to make the balls, preheat the oven to 400F, and oil a baking dish.
- Saute 1/2 a chopped onion until softened.



- Stir in 4 large, chopped tomatoes. Season with salt and pepper.
- Add a mixture of 1 T whole wheat flour and 2 T water.
- Add 2 sprigs thyme, 1 bay leaf, 1 1/4 cups veggie stock; simmer 20 min.



- Saute 1 diced eggplant; remove from pan and saute 1 diced red pepper and 1/2 an onion.



- Transfer the bell pepper mixture to a large bowl. Mix in the soy beans, eggplant, 1 chopped clove of garlic, 1 cup bread crumbs, 1/2 cup Parmesan cheese, and 2 lightly beaten eggs.



- Form the mixture into balls. Arrange in prepared dish and bake 10 min.





- Pour half the sauce over and bake again until golden (about 15 min). Serve hot with the remaining sauce.



My portion:


If I had to pick my favourites of the 10, I would say that #1 was my VERY favourite, and after that would be #2, #3 and #9 in no particular order.

I really enjoyed making 10 different vegetarian recipes this month! I have actually felt healthier eating more veggie meals, and have enjoyed being a little more adventurous in my protein choices. I think the hubby and I are going to try and limit our meat intake to a couple times a week, and focus on veggie meals the rest of the time.

My favorite meat free meal is probably curry. Indians know what they're doing with vegetarian food, since so many don't eat meat!

I usually have some kind of meat or egg in my dish. I'm not a big fan of tofu. But your recipe collection sounds amazing! This soy bean ball...it sounds glorious, and you're so creative in coming up with delectable meat-free recipes...I sure won't be missing anything!

my fiance pouts if there's no meat at dinner... so most of the time i try (on weekdays at least) to keep my breakfasts and lunches vegetarian. i know it helps me eat better, and a better varriety to do so... and we have meat at dinner so he doesn't get mad

What a great idea to make 10 veggie meals- I say 10/31 totally counts! I don't eat much meat, maybe 3 or so servings a week? I tend to get most of my protein from nuts, dairy, and grains. I agree with eating machine above and do include meat- mostly chicken or fish for my husband so he doesn't get confused.

my favorite meat free meals are probably the simple ones I make at home with roasted veggies. I'm a massive squash fan, so this time of year is heaven for me!
