Last Week's Eats & Halloween

On Monday and Tuesday last week it was really cold!  We warmed up with some hearty eats, including one of our favourite pasta dishes, Linguine with Green Olive Sauce and Zesty Breadcrumbs:


If you like briny flavours (capers, olives) you need to make this dish!


It reheats well the next day, but good luck having any leftover!  Mmm!

We also made a new recipe, Thai Red Curry Chicken Thighs with Zucchini:

 

This was really easy to make, and it hit the spot.  I love zucchini, and you can never go wrong with a Thai curry.


Christopher smoked a couple chunks of salmon outside in the cold, and it smelled incredible in the cool air.  I went outside with him when he was glazing it, just to take in that wood-smoke smell.  We enjoyed some of the salmon one evening with cream cheese, paratha, and fresh dill.


My breakfasts all week mostly looked like this:


The weather warmed up for Halloween, but we only got 13 kids!  We bought way too much candy, so I guess I'll be taking it to work to share.  Our Halloween tradition is to order in pizza, so we called for Dominos and got comfy on the couch, so we could easily hop up to get the door.


We didn't dress up or go out for Halloween this year.  It was very low-key.

Happy Sunday everyone! I hope you all had a relaxing/ homework free day like I did!

This morning started out great because the hubby offered to make pancakes! This is my portion:



With real maple syrup for dipping:



I prefer to dip my pancakes, because then they don't get soggy.

For a later morning snack I had 1/2 of this:



This was my first try of an Amazing Grass Bar ... and I found it a little too sweet for my liking. The nutritionals are amazing though, so I will be finishing the bar at some point, and eating the other few that I have.

Around 1:30 we picked up my little nephew to hang out for the afternoon. We went shopping a bit, and had a late lunch at Costco. I wasn't hungry, so I had about 1/2 piece of pizza and a few fries.

For dinner we went to the hubby's parents house. We had ribs and rice:



And salad with mixed greens, apple, cranberries, pecans, and a light dressing:



I also had a glass of crystal light icetea:



This evening the hubby and I are going to watch some of our shows. I made a little POM spritzer to enjoy.



I also had some of this homeopathic medicine today to try and help me get over my cold:



I don't know if it works, but it is worth a shot. Have you ever tried a homeopathic medicine/ remedy?

Another weekend has come and gone ... and tomorrow is Monday - sorry to remind you.
This week is sure to be crazy busy, and I still need a costume idea for Halloween!

One Foggy Monday

Good morning darlings! I looked out my window this morning, and instead of snow I saw FOG!

I woke up really hungry today - which is strange because for the last few days I have not been hungry at all in the morning.

I made a GREEN Monster (3 large handfuls spinach, unsweetened vanilla almond milk, really ripe banana):



I also had a slice of whole wheat toast with some margarine:



And a cup of black coffee of course:



Can you believe it is October 19th already!!?? I feel like this month just started!
I am really excited for Halloween to come and go - because then the Christmas stuff will come out! I absolutely LOVE Christmas shopping, and I start the second Halloween is over :-)
