A Week of Eats

We were supposed to land in Regina around 4:30 p.m. on Saturday 23rd, after coming home from Havana.  We had to do a quick detour to Saskatoon, as the visibility was too bad in Regina to land, but were back in the air again after only an hour in Saskatoon.  We landed at 8:30 p.m., and decided to head straight to the grocery store, without even stopping at home to drop off our luggage.  I had made a meal plan and grocery list on the flight, so we were good to go!

The next morning, after a great sleep, I made a veggie frittata, toast, and smoothies for breakfast:


That evening we cooked dak galbi and a batch of pork noodles.  I made a berry crisp for dessert. 


There was enough food for dinner Sunday and Monday, as well as work lunches for a couple of days.

On Tuesday evening we had trout with a kohlrabi slaw, served over a yogurt sauce:


Dinner on Wednesday was a rosé meat sauce over some interestingly shaped noodles that we found in PC's Black Label section.  We wanted a quick sauce, so we just cooked up ground beef in olive oil until done, then added two jars of rosé sauce, and a few splashes of milk to thin it out.  It was delicious!


Before Spanish class on Thursday we made a vegetarian stir fry.


On Friday we had Greek chicken, rice, and a roasted beet/ mushroom mixture.


For a third weekend in a row of traveling and staying in hotels, we spent this past weekend in Saskatoon to see my mom.

We are very ready for a weekend at home, and other than tomorrow night, we don't plan to leave the house again until Monday morning.

Yum! I bet it felt good to get back into the kitchen after your vacation. Your week of eats looks delicious! I hope this past weekend at home was a great one. You've been on the go so much lately between your trip and visiting your mom!

We had a retirement party on Saturday night and that was all we had planned for a weekend. A house came on the market Friday morning and we ended up making an offer on Saturday but found out on Sunday that it wasn't accepted. There were 5 offers as it was a beautiful housed that was priced to sell. I'm trying to forget the beautiful kitchen... Womp womp.
