Work Week Eats

On Monday evening I roasted a chicken for dinner.  I quartered some potatoes and tossed those in for a good portion of the cooking time, basting them every so often with the chicken fat.


We had a salad along with the potatoes and chicken.


On Tuesday evening we had pasta and garlic bread for dinner.

 

I cooked up some extra bacon and made a quiche that I then had for breakfast for the rest of the week.


Christopher made dinner on Wednesday evening - a big pot of chili, which we had with cornbread for dipping.


On Thursday evening we ate leftovers.

This weekend we're celebrating!  (More on that in the next post).

As usual, all of the food you've been eating looks delicious! We ate lots of soups this week as I froze a couple and a friend brought one over this week when she took me to PT. I think we are getting a little 'soup'd out', though, or at least Phil is, so tonight we are having spaghetti with a ragu that I made and froze before my surgery.

This has been a quiet weekend for us as I'm recovering from surgery. I did make it out of the house for a friend's daughter's first birthday party. Besides that I've been doing my PT exercises and trying to take it easy and let my body heal.
