Eats this Week

On Sunday evening we didn't want to do much cooking.  We had a very simple dinner, sharing a can of tomato soup, and a can of salmon.  To drink we had some freshly made juice.


We juiced carrot, beet, celery, cucumber and apple:


Dinner on Monday evening was a warm salad, with fresh mixed greens, sauteed garlic and kale, roasted zucchini, broccoli, mushrooms, radish, and potatoes.  With a bit of salad dressing drizzled on top, it was so satisfying.


Last night we roasted a large chicken.  We used the drippings to make gravy, and had potatoes and carrots on the side. 


A chicken stock is currently simmering away, and we're going to enjoy leftovers tonight.

Mmmm I am envious of the home cooked simple meals you have been having. I have been traveling since Sunday afternoon and I am sooo sick of eating out! The week has gone fast though. I can't wait to get home tonight!
