Making Meals Stretch

One of the ways we've decided to save money in November is to make meals that would stretch.  On Sunday evening we cooked a ham dinner.


We've been eating the leftovers all week ...


And we used the ham bone to make the broth for a big pot of borscht.


We both absolutely love borscht, and it turned out beautifully.

This weekend we'll be staying in and cooking Indian food!

Yum! All those meals look awesome! I love dishes where you can repurpose things. My mom was the queen of that growing up. My favorite thing she'd make is chow mein from leftover pot roast. Yum!

Today is Julia Child Night so I am getting ready to start prepping the components of the winter salad we'll be making!

I love borscht too! In fact I think I'm going to pull out some frozen borscht for lunches the rest of this week. Ham and scalloped potatoes is another favourite meal for me!
