We started by marinating some pork.
Korean Pork Marinade
1 tsp gochujang paste (Korean grocery store)
1 tsp sesame oil
3 T mirin (or cooking wine)
1 tsp soy sauce
1 tsp hoisin
salt, pepper, ginger powder, garlic powder - to taste
Then you just cut up whatever you want inside your fresh rolls. We used chopped kimchi, green onion, and cucumber.
Pour boiling water over rice noodles. They will soften right away. Drain the water.
Dip rice papers in hot water until they just start to soften.
Lay the paper down and fill with noodles, a couple pieces of pork, and the veggies. Roll.
We dipped ours in a Korean dip.
Korean Fresh Roll Dip
2 tsp gochujang paste
enough water just to cover the paste
1 T brown sugar
Mix well.

Yum, those sound delicious and fairly easy to make! I am not good at coming up with fusion ideas but I always enjoy eating them. ;)
