We didn't know what to cook tonight, so I stopped at Costco and found some maple chipotle short ribs that I remembered to be quite good.
These ribs are very thin, so they need to be BBQd on low, for a short time and watched very closely. Christopher cooked them perfectly. On the side we had Greek salad and asparagus.
It was a simple, easy dinner, but it hit the spot.
We won't be cooking anything for the next couple of days ... it's going to be a fun-filled, busy weekend. Check back for a recap on Sunday.

Yum, that looks delicious! I have to laugh over our difference in the idea of a simple meal though. ;) My idea of a simple meal is a microwaved baked potato. Boring, I know!
After months of boring, study-filled weekends, I finally have a fun weekend on tap! I am so excited to not spend a minute studying or thinking about the CFA exam!
I've never made short ribs before. Those look great! I want to grill tonight, but I can't decide what I want to grill. This weekend should be pretty low key for me. Just the usual of eating lots of delicious food! Hope you have a good one!
