Jambalaya and a Mystery Giveaway!

Recently I booked a trip to New Orleans, which I will be taking in the Spring.  Since booking this trip, I have been craving southern food like crazy!!  I can't wait for po boys, and gumbo, etc..

Yesterday I made a delicious jambalaya, which I served with a salad.


Jambalaya

1 lb spicy sausage, sliced
1 lb chicken breast, sliced
10-12 shrimp, cooked, tails off
2 green peppers, diced
1 red pepper, diced
1 white onion, diced
4 garlic cloves, minced
1 tsp  dried oregano
1/2 tsp pepper
1/2 tsp cayenne
1 T dried basil
3-4 jalapeno peppers, seeded and minced
2 large tomatoes, chopped
3 T tomato paste
3-4 cups chicken broth
2 cups long grain rice
1/2 cup cilantro

In a large metal pot (not nonstick) cook the sausage over medium until cooked.  Remove and then cook chicken until just cooked.  Remove the chicken.  Toss the peppers, onion, garlic, spices, and tomatoes in to the pot and cook for about 10 minutes, or until soft, stirring often.  Add tomato paste, 3 cups broth and rice.  Simmer, covered until rice is cooked (about 20 minutes - add more broth if necessary).  Toss the meats and shrimp in for the last few minutes to warm.  Sprinkle with cilantro before serving.

I've made jambalaya before but not in years, this makes me want to again! I 'm kind of a wimp when it comes to spicy food so I make it pretty mild.

OUR DATE IS TOMORROW!!!!! I almost forgot to pack the chopsticks and spoons....but then I remembered that's probably the only reason you want to meet me tomorrow. Haha, joking!

Okay to answer your question:

I found your blog on a forum of healthy living bloggers. At first I was sooooo pumped that you lived in Regina. Then I stalked your site for awhile without commenting because I honestly thought I wasn't 'cool enough'. I was like 'that girls been to all these famous food blog events and hung out with all the popular bloggers, plus she's got that daily food buzz thing on the top of her site so there is no way she's going to find anything interesting in ME!'. Sooooo one day I just decided to comment because I saw that you liked Korean food (specifically kimchi). Maybe that was 6 months ago or so. Then I started writing more on your site.....AND then you started commenting on my site. LIKE EVERY SINGLE POST. And I was thinking 'geez, this girl is totally awesome and I'm so happy that I was brave enough to pop in to say 'hi'

Okay, so that was more like a story book, but that's how I roll.

p.s. you know where I'm from. The North End, silly ;)

Ooo, a mystery! I like it! I don't know how long I have been reading, it's been several years, though, maybe 2-3? I love your blog and am always blown away by the meals you make (especially when you host others for dinner).

I have made jumbalaya before and I loved it. I would definitely make it again. I have not been to NOLA, but I would love to visit some day!

This'll probably sound strange given that I'm a food blogger and all, but I don't think I've ever had jambalaya. I've certainly never veganized it, and I don't recall it from my youth (my parents weren't experimental with food). So envious of the New Orleans trip, I'm hoping to get somewhere awesome in the spring too!

I'll enter the mystery giveaway BUT since I don't know what it is, if it isn't vegan-friendly and I'm selected, I'd gladly pass on the hat to someone else. :)

I've never been to New Orleans but would love to go. I have this image of a beautiful big open air restaurant, a white veranda out front and big shutters on the windows. I would sit beneath a giant ceiling fan and enjoy a huge plate of beignets while jazz music filtered through the open doors and windows of the restaurant. I think that sounds awesome. so jealous! can't wait to see all the photos and hear about the adventures in Louisiana!

I was in NOLA for work a couple of years ago and only got one free night to explore the city, but in that short time I fell in love. I'd definitely suggest dinner at the Red Fish Grill and Jazz and Preservation Hall.

I don't think I've had jambalya - but I will definitely try this recipe. It looks healthy and hearty.

Hi Jolene! I'm also fom Regina, been following you for a year at least. After I tried your burnt grapes recipe lat summer I was hooked! Can't quite remember how I stumbled upon you, but I'm glad I did. I've never been to NOLA (as the locals call it, or at least the one person I met from there did!). I would love to try beignets, so please be sure to post what you think of it if you do!

I have never been to New Orleans or made jambalaya but I have tried it and loved it! My great aunt used to make it quite often.
