Last Week's Eats & Halloween

On Monday and Tuesday last week it was really cold!  We warmed up with some hearty eats, including one of our favourite pasta dishes, Linguine with Green Olive Sauce and Zesty Breadcrumbs:

If you like briny flavours (capers, olives) you need to make this dish!

It reheats well the next day, but good luck having any leftover!  Mmm!

We also made a new recipe, Thai Red Curry Chicken Thighs with Zucchini:

This was really easy to make, and it hit the spot.  I love zucchini, and you can never go wrong with a Thai curry.

Christopher smoked a couple chunks of salmon outside in the cold, and it smelled incredible in the cool air.  I went outside with him when he was glazing it, just to take in that wood-smoke smell.  We enjoyed some of the salmon one evening with cream cheese, paratha, and fresh dill.

My breakfasts all week mostly looked like this:

The weather warmed up for Halloween, but we only got 13 kids!  We bought way too much candy, so I guess I'll be taking it to work to share.  Our Halloween tradition is to order in pizza, so we called for Dominos and got comfy on the couch, so we could easily hop up to get the door.

We didn't dress up or go out for Halloween this year.  It was very low-key.

How was your Halloween?  Did you hand out candy?  Take someone out trick-or-treating?  How many kids showed up at your door?  Did you dress up?  Do you order in on Halloween?

I need to make that olivey sauce. Phil and I both love olive-based sauces. Give me allll the capers and briny flavor! I am kind of on a grand pause of cooking until after our move but I need to try both of these recipes. What brand of red curry paste do you use? I am kind of limited in needing it to be GF so I have to use Thai Kitchen products and I'm not super thrilled with them. I think I might try to make my own curry paste in the future - any tips on which recipe to use if you've made your own?

We had a nice Halloween. We went to 3 houses on our block to say we were moving/goodbye. We didn't bring a bucket for Paul to collect candy but each house gave us some. Then we went home and Phil handed out candy. We didn't dress up but Paul wore his duck costume. Paul thought that was really fun so he helped out until he went to bed at 7. He didn't hand out any candy but he had fun grabbing candy from the bowl, running around and then putting the candy back in the bowl. Whatever it takes to entertain a toddler, I guess!

Lisa - yes, you have to make the olive pasta. It is our new favourite!

We use the Cock Rote brand of red curry paste. I'll link it here so you can see the picture: https://shop.waiyeehong.com/food-ingredients/sauces-oils/curry-sauces-and-pastes/red-curry-paste-2

When we were in Thailand, this is what many people recommended there too. We've made our own, but this store-bought one is just as good as anything we've made, so now we just stick to it, because it's easier, and we don't own a mortar and pestle :-) It also has the exact same ingredients we'd use anyway, so it should be gluten-free! (just red chili, lemon grass, garlic, shallot, salt, lime leaf, galangal root, coriander seed and cumin).
