We toasted the bread, warmed the beans, and cooked the sausage on the grill, while cooking the eggs in a pan on the side burner.
It was a really satisfying breakfast, and it kept us full until dinner.
Twice Christopher made pico de gallo omelettes:
Skillets one day:
French toast with buttermilk (yum!) another day:
Egg in a hole:
Mini buttermilk pancakes:
Poached eggs with potatoes and bacon:
And sunny eggs with toast and bacon:
We always used my homemade bread for the toast.
One day we woke up late, and instead of having breakfast, we went out for an early lunch to try a new restaurant.
Yesterday I was back to being on my own for breakfast, so I made a one-egg omelette and had it over a piece of toast.
And rewind to two weeks ago ... I was mostly eating quiche:
Or random breakfasts like Saskatoon berries, cashews, and a small piece of rhubarb snacky cake that I had made with rhubarb that Christopher's parents gave us.
What have you been eating for breakfast lately?
What is your favourite thing to have for breakfast?
How do you like your eggs?
What do you like to put on your toast?

I love your breakfast posts. Breakfast is my favourite meal and I can eat breakfast food all day long. I love a good omelette or frittata, bacon, sausage, potatoes. And I love my eggs over easy, runny yolks, and salted butter on my toast! Not a fan of sweet breakfast, if I have waffles or pancakes it’s just a touch of syrup and with bacon or sausage to go with.
Yum. Breakfast is one of my favorites meals and all of your breakfasts look so good. My favorite breakfast is something egg-based, like an omelet. Phil gets tamales during the week sometimes and brings one home and shreds it over scrambled eggs with hashbrowns so that’s another favorite breakfast of mine. My favorite way to eat eggs is over easy but only if I have GF toast to dip in the yolk. Otherwise I like them scrambled. And I like peanut butter and raspberry jam on my toast! (When it’s not being used to soak up runny yolks!)
