I realized too late that we didn't have soda crackers to crumble over the top before cooking, which would have made the casserole even better ...
Our other retro dinner was meatloaf with mashed potatoes and creamed corn. The creamed corn has to go on top of the potatoes.
The leftovers of this meal were so good; we'll be making it again soon. Although, every time we have meatloaf we comment that we should make it more often, and then we forget about it for about a year ...

Yum, these retro dishes look so good! They are perfect 'stick to your bones' kind of meals, which I also crave during cold weather. I made pot roast with potatoes and carrots last night in the instant pot and that hit the spot. And it didn't require much effort which is key since it's still hard for me to up and about for very long. I also made mini meatloafs a couple of weeks ago with salami and provolone cheese. I used this recipe, but just used black olives since I didn't feel like going to Whole Foods for the muffaletta mix. They were very tasty (although obv not healthy with all the meat and cheese!!).
