Chocolate Cake

I've never been much of a cake person, as I often find that cakes are either too dry, or too fluffy.  That being said, I'd rather have a fluffy, moist cake, than a dense, dry cake.  What I look for in a cake is the perfect combination of extreme-density, and ultra-moistness

This chocolate cake from Fine Cooking magazine fits the bill!


The secret ingredient is shredded, roasted beet!  If you're not a beet fan, not to worry, you won't detect them.  The batter is gorgeous, and easy to work with.  I watched the cake closely, and did the toothpick test a few times to ensure that I pulled it out when it was juuuuuust done.


Christopher loved the super-chocolaty icing, and I loved how easy the cake was to ice.  It went on smoothly and easily, even though the cake was super moist, which isn't always the case for icing.  Perfection!


I made this last week, and it was gone in no time.  This is a recipe I'll absolutely be keeping handy to make again.


It is very, very dense.  Lifting the plate with the cake on it, I was amazed at how heavy it was.  It's also extremely chocolatey and really satisfying.  If you're craving chocolate cake, this will hit the spot.  If you want to make it, you can find the recipe here.

That looks amazing! I can tell how moist and rich it is just by looking at it. I like dense moist cakes too. Those bakery sheet cakes aren't even worth the calories!

I loved the homemade chocolate cake my mom made for us when I was growing up. it is moist and oh so delicious. I was just talking about it with Phil's mom last night and said I need to get the recipe and try to make it with GF flour as I have a GF flour mix that works really well as a cup-for-cup substitute for AP flour. And I apparently have had beet chocolate cake, too, because my mom and brother were talking about it at the lake last weekend. I sent my brother home with a bunch of beets and he was going to make it. I do not remember having it but my mom said I must have because she made it a lot when we were kids. She probably just left out the fact that there were beets in it! ;)
