Vacation Detox

Since we've been home from vacation, we've been loading up on veggies.  It always seems we don't get enough of them when we're away.  We had a sandwich loaded with veggies:


Roasted vegetable lettuce wraps:


 Spaghetti squash (roasted, and then baked with sauce and cheese):


And last night we had a veggie curry.

We also BBQd this week for the first time in 2015!


It was so nice to sit outside and visit, which we do every day after work in the summer.  We even saw a little friend ...


We enjoyed our BBQd salmon and potatoes with a big salad.

We actually have not cooked outside yet this year! Phil doesn't have a grill and it's kind of a pain to go down to the grilling area in my condo since it's 12 floors away... but we need to do some grilling soon (and Phil needs to buy a grill!).

We were bbq'ing before the snow and ice were gone. We love how it makes meal prep so much simpler and still delicious. We've been experimenting with chicken marinades, eating sausages, and grilling up some hot dogs, too.

I had never considered baked spaghetti squash, but now I'm intrigued. Looks completely divine.
