Vegan Tofu Scramble ... With Bacon.

I've been reading Allysia's blog for a while, and met her for the first time in person this past summer.  She always makes the best vegan breakfasts, and I've been meaning to try one of her breakfast recipes for a while.  Today we randomly decided to make her basic tofu scramble, and luckily had all the ingredients on hand.


On the side ... bacon.  And toast.


We both thought the tofu scramble was really, really, good, and were surprised by how much it tasted like an egg scramble.  Tofu really is a great egg replacement!

You can find the recipe here.  The only change we made was using half of a pepper instead of a whole one, and instead adding some greens (kale,spinach) that were on their last legs.

We went to a HUGE, beautiful breakfast buffet yesterday before leaving to come back to DC. I'm not typically a fan of buffets, but it was fabulous.

Yay tofu scramble! I think I'll be making something along those lines for brunch this weekend. :) And I'm not surprised at all to see bacon on that plate, ha ha. :) I'm glad you liked it - and yeah, I love how tofu scrambles (and probably egg scrambles too) are such an open template for whatever veggies and seasonings you have on hand.

Last weekend I was in Charlotte apartment hunting. One day my mom and I had yogurt & oatmeal from Starbucks, the other day we split an omelette that came with roasted fingerling potatoes that were SO good!
