Coconut White Mocha Oats
- Just under a cup of coffee
- A heaping tablespoon of coconut milk
- 1/2 cup oats
- 1 T white chocolate PB
- Sprinkle of Maple Flakes
Breakfast was oats and coffee. Lunch was homemade chicken noodle soup, an orange, a small handful of crispy minis and a little piece of carrot cake. I put some ketchup in my soup, and stirred it up. It gives it a nice tomato flavour that is SO good in homemade chicken soup - trust me!! People think that it is weird!
Dinner was a falafel pita with cucumbers, tomatoes, cheese, falafel, and homemade tzatziki sauce:
The hubby asked me to pick up some tzatziki sauce on my way home from work. I decided to whip some up from scratch instead, as I had all the ingredients on hand.
Sour Cream Tzatziki Sauce
- Approx 3/4 cup sour cream
- 1/2 English cucumber grated, and liquid squeezed out
- 1 T dill
- 1 1/2 tsp extra virgin olive oil
- 1 clove garlic crushed
- 1 T lemon juice
- Some sea salt to taste
This sauce was SO good!! I am glad I tried making one on my one instead of buying it. It was cheaper, healthier, and tastier - perfect!
