Carbolicious

So, yeah ... definitely had no veggies today.

Ooops.

I have been lacking in the veggie department in general lately - it is a good thing I have had a couple GM's this week.

Breakfast this morning was a bowl of peanut butter and banana oats, with a sprinkle of unsweetened coconut:



Lunch was leftover risotto (see yesterday's post for the recipe - it is delicious):



I also had an orange:


For dinner I had one of my favourite dinners from when I was a kid. When I married my husband I made it for him, and we ate it once a week for the first 3 years of our marriage! It was his FAVOURITE!

We call it "Haystacks."

It is basically rice topped with ground beef (seasoned with taco seasoning), cheese, salsa and taco chips. It is like a taco salad, but no lettuce. We often add black olives, but I didn't have any.



So simple, yet so good.

I am craving some vitamins, so I am going to grab a grapefruit and then go watch Grey's with the hubby.

What is a meal that reminds you of your childhood?

hmmm. i think a meal that reminds me of childhood is CHEF BOYARDEE! crazy, right?
hahha. haystacks sounds delicious! =D
hahha and sometimes you just need to carbo load. all that blogging and thinking uses up a lot of energy!

Meals that remind me of my childhood...tuna noodle casserole! And meatloaf! Haha...I guess my mom was into retro comfort food :-)

That haystack sounds delicious. Sometimes veggies are just hard to come by. At least you got some fruits in :)

One of my favorite childhood (and early adulthood) combos is macaroni and cheeze (made with Cheese Whiz, never Kraft Dinner!) with what we called "gravy hamburger". Basically browned ground beef with a bit of onion, then adding some beef stock (Oxo usually) and thickening it with a little flour. Yum. Of course I could never eat that now (hate to think of the WW points!), but I loved that cheesy gravy goodness:)

I haven't had much veggies today, either. In fact, the onions in my french onion soup and the celery in my tuna melt was the only veggies I had all day. Whoops.

Korean rice cake soup reminds me of childhood! And the dreaded, evil seaweed soup. >:-(
