Beet It

Cause, we got the beet, we got the beet, we got the beet, yeah, we got it!


We've been thinking of all things beet lately, and I don't see any sign of us stopping.  I don't think a vegetable could be any more gorgeous.

On Saturday we fried up latkes to use as a base for eggs benedict.


We topped each with smoked salmon:


Then a soft-poached egg, and beet hollandaise:


Finally fresh dill:


To make the beet hollandaise, we juiced a raw beet, and used the juice in place of the lemon juice that would typically be in hollandaise.


It was incredible.


This weekend we also made bagels.


And a beautifully whipped, beet-horseradish cream cheese:


To make the beet cream cheese, we blended puréed, cooked beet, with a block of cream cheese, and horseradish to taste.


We topped the bagels with smoked salmon and dill (we clearly can't get enough smoked salmon either).


Today we made beet hummus, subbing in puréed beets for chickpeas in a basic hummus recipe.


The wheels are already turning with other ways we can make beets stand out front and center.

Winter Stir Fry

I had a bunch of veggies in the fridge, and was craving something flavourful and healthy, yet hearty.  I decided to make a winter stir-fry.

 

This stir fry contained: rutabaga, beets, red onion, carrots, red cabbage, zucchini and kale.  

 
 

I chopped the veggies into bite-size pieces and heated 1 T of coconut oil in a wok.  I cooked the rutabaga, beets, red onion, and carrots until almost tender, salting a bit throughout.  I then tossed in 1 small (160 ml) can of coconut milk, 3 tsp of curry powder and 1 tsp ginger.  Next I added the cabbage and zucchini and cooked those until tender before adding the kale just until wilted.

I sprinkled sesame seeds on top before digging in.


This made a perfect lunch, and I have plenty left over to enjoy as a side dish with another couple of meals.  I had never put rutabaga, beet or kale in a stir fry before, but they were great!

Fashion and Frivolity

Because my life doesn't completely revolve around food - okay, maybe it does ... but I do love fashion and being a little frivolous too. Some of my favourite finds this spring/summer include:

White gold may be very popular, but I am way more into yellow gold.  I fell in love with this vintage ring in NY in April, and couldn't leave without it:

My favourite fashion item of all has always been handbags.  I picked up a summery one back in April (the reddish/orange one) and a fall bag while I was in Vegas in July.  The big one is available at all times, but the smaller one was only out for a limited time in the colour shown; you can still buy it in other colours.

And because this is a food blog, I should leave you with a food picture.  I spent the morning at the farmers' market with a girlfriend of mine and picked up these beauties.
