About Friday Night

I spent Friday afternoon cooking and prepping, so that I could surprise Christopher with a multi-course meal.

Poaching liquid for the chicken, which I then cooked the lentils in.
He knew I was cooking, but he had no idea what we were having.  A lot of the work was done ahead of time, so that I could hang out with him in the living room, and only have to go into the kitchen for a couple of minutes between courses.

We started with bourbon smoked Gouda, and mini steak au poivre bites (filet mignon crusted with peppercorns, over crispy potatoes with a carmalized onion/shallot mixture, sour cream, and crushed pink peppercorns):


A while later we had bacon-wrapped, parmesan stuffed dates:


The main course was ginger soy chicken with saucy lentils.  The chicken was poached in a sake, soy, ginger, spice mixture, and then roasted to crisp the skin.  The lentils were cooked in the poaching liquid.  I then topped the chicken with sour cream, green onion, cilantro, and red chilies.

On the side I served a carrot salad with an Asian dressing.

 
 
 
 

Dessert was mini, blueberry, no-bake cheesecakes for two:


We had some leftovers from this meal, and it made a good dinner again yesterday evening.

The rest of the weekend has been super low-key and chilled out; we had no plans, and have been enjoying the nice weather and doing a lot of relaxing.  Christopher is making jerked pork chops this evening - mmm!

Yum! This all looks delicious! What a fun surprise for Christopher to come home to. I bet he was looking forward to it all day on Friday!!

We had a really low key weekend which was wonderful. We stopped by at my company’s summer event on Friday before picking Paul up from daycare and then we had no other plans. I’m all about plan free weekends now that we have a baby. He isn’t on a schedule so it’s really hard to make plans. And he can only handle about 1.5 hours of being awake so it’s tough to get out of the house with him. But I have an over planned life for many years so am really enjoying this slower pace of life!
