Family Day Weekend

Happy long weekend friends!  We're taking it easy this weekend, and doing absolutely nothing.  We had an eventful week, with our anniversary on Monday and Valentine's day on Tuesday. 


Since we went out for our anniversary, we just stayed in on Valentine's evening and snacked for supper.


It was a delicious spread of meats, cheeses, smoked oysters, olive tapenade, and my favourite chocolates ever, Bernard Callebaut chocolates.

Because this meal was lacking in vegetables, we made up for it by having a giant roasted vegetable salad for dinner on Wednesday, and a veggie-loaded shrimp curry on Thursday.

The curry was so good, that we just had to make another one on Friday evening, but with the addition of noodles, and topped with trout.  We don't have an actual curry recipe, instead we just throw it together each time.


We always start with ginger, onions, garlic and other veggies cooked up in coconut oil and curry paste, then add a bit of turmeric, curry powder, and pepper.  We have discovered that adding a dash or two of  soy sauce and about a tsp of fish sauce really adds to the flavour and umami of the dish.  Once the veggies are 1/2-3/4 cooked, we add a splash of white wine to de-glaze the pan, then we add coconut milk, bring it to a boil, and let it simmer until veggies are softened to our liking.  Then we'll taste and add a bit more curry powder, and a bunch of fresh lime juice.


This meal was fantastic, and didn't take too long to make.

Today is Family day in Saskatchewan, so we have the day off; I actually have the whole week off - yay for holidays!  We started a turkey/duck stock this morning, and will let that simmer all day:

Yum, all of those meals looks and sound delicious! I definitely need to work on improving my curry. I have made it a couple of times and it just doesn't taste as good as I had hoped so I need to work around with the spices.

We had a long weekend as well as yesterday was Presidents' Day. It was nice to have an extra day off. I did a lot of wedding-related projects/errands this weekend in preparation for a crafting weekend I'm having in 2 weeks when my SIL comes in from Chicago. We also grilled on Saturday as it was super warm here. We are going to grill again later this week, too!
