What's Up Wednesday

We cooked up a vegetarian, gluten-free lasagna this evening.  We used brown rice noodles, and loads of veggies (chopped zucchini, kale, garlic, shallot, shiitake mushrooms, olives and parsley):


The cheeses were a mixture of mozzarella, provolone, Parmesan, grana padano, and havarti:


We also used cottage cheese, mixed with tomato sauce, and oregano, for a meaty texture - it almost looks like a meat layer.


It's been ages since we had lasagna, but it's so satisfying.


A little salad on the side for an extra punch of veggies.


Last night my dad took Christopher and I out for dinner to Swiss Chalet.  Our sweet nephew Giovanni joined us too - me and three of my most favourite guys!


We had a nice visit, and enjoyed the meal.

That's so cool that you got interviewed! That means you are kind of a big deal, lady! :) I enjoyed reading your answers. I should make that yum yum bowl as it sounds awesome.

The lasagna you made looks delicious. I love the deep lasagna pan that you have! I need something like that! Luckily GF lasagna usually turns out great and people can't tell the pasta is GF since there are so many layers and other flavors and ALL THE CHEESE! :)

This week has not been my favorite. I've had some stressful days at work, some difficulties coordinating a family Christmas gift for my parents, and an issue with my tenant so I'm kind of ready for this week to be OVER.
