'Bread and Butter' and Tortilla Soup

It just might make you smile, or at the very least, poop your pants.

This evening I made some tortilla soup with loads of toppings.  

If you want to know the way to my heart, it is Mexican food, toppings of any kind ... and that lead singer from the video above ;-) Hehe.

Tortilla Soup


1 chopped onion
2 T olive oil
1 chopped red pepper
4 minced garlic cloves
1.5 tsp cumin
pinch cayenne
1/2 chipotle pepper in adobe sauce (1/2 a pepper, NOT half a can)
zest from 1 lime
1 small can chopped green chilies
1-2 chopped tomatoes
2 chicken breasts (cooked and shredded) - or you could use black beans for a veg. soup
4 cups chicken or veggie broth 
1/2 cup sour cream

Toppings:
  • Sour cream
  • Avocado
  • 1 million bunches of cilantro
  • Fresh lime
  • Cheese
  • Tortilla strips (bake 1 tortilla for about 10 minutes, then break up)
Directions:
Heat oil.  Add onion and red pepper.  Cook for a few minutes until soft.  Add garlic and spices and stir for 30 seconds.  Add everything else except the sour cream.  Bring to a boil, then simmer for about 20 minutes.  Add sour cream and stir in before serving.  Throw a whole bunch of toppings on and enjoy!


All stirred up and ready to be devoured ...


After eating this glorious dinner, I avoided doing report cards by making chocolate chip cookies ...


A girls gotta do what a girls gotta do.

Oh my dear Jolene! You can surely tell how young you are by your delight in "Bread and Butter". I remember that song from when I was a little girl...sad, but true. You should listen to Nat King Cole's "Lazy, Hazy, Crazy Days of Summer." Lovin' it.

I've never made tortilla soup, but this looks delicious. I don't know what it is, but I swear when I make soup, I don't like it that much vs. when someone else makes it. I would definitely top it with cheese and avo, but much cilantro. I like cilantro in small doses, but don't love tons of it.

Weekend plans: mostly studying. Maybe I'll have a chance to procrastinate/bake, on Sunday? Those cookies look really good. :)

I love tortilla soup!! Seriously its one of my favorite soups to cook and I almost always get it during winter months at mexican food places. So delicious :)

Last night I went to a concert, today I had coffee with my SIL and tonight I'm going to a birthday dinner. Tomorrow I have work and hopefully a relaxing dinner.

love tortilla soup!!!! but never order it in restaurants bc of all the sodium. i hate added salt..my body just holds onto it..and i drink water for days..lol

your version looks amazing! as do the cookiiiiiiiies!

Yum - that soup looks awesome. I love tortilla soup! And I could totally leave out the sour cream/cheese and have this. Maybe that will be the meal I make next weekend!

As far as toppings, I'd load up on avocado & cilantro. Yum.
