Bare

The fridge has been looking a little bare lately.  Life has been a bit busy, so we have been relying on pantry and freezer items and meals that require little prepThesis work for me and triathlon training for the hubby = no time for cooking anything fancy.

We always have oats in the cupboard, so they are good for easy, empty-fridge breakfasts.

 

Some jarred sauce, frozen organic beef, and rice pasta makes a great spaghetti bolognese when jazzed up with some garlic, onions, balsamic, spices and a rind from Parmesan thrown in for a while for flavour.

 
 
 

I found a lonely lemon and avocado in the fridge and whipped up 15 Minute Creamy Avocado Pasta for dinner this evening.  

 

I have had my fill of pasta for a while and am craving something different ... perhaps sushi tomorrow.

What do you eat when the fridge gets bare?

I'm a bit of a hoarder, so my fridge never gets too bare. But, I love the challenge of trying to make it bare.

I use a lot of frittatas, pasta, and risotto.

Good luck with your thesis work! keep your head down, keep making progress, even if it's only in 15 minute increments.

very creative! at the end of the week our fridge always gets pretty bare- it's usually a pasta or rice with veggies/beans/anything found night!

Yum! I have to make some of that avocado pasta soon. It's one of my fave dishes and it just tastes like spring/summer to me! :)

When my fridge gets bare, I turn to my pantry cupboards and eat things like rice and soup.

Omelettes, omeletts and more omelettes. Whole wheat cous cous with cumin, golden raisins, greek yogurt and honey drizzeld on top, tune melt made in a baked sweet potato instead of bread.

My fridge is always empty so we eat eggs. Lots and lots of eggs!

I freaking love frozen salmon patties from costco!! That's my go to easy "meal". BTW is that avocado pasta good? looks good!

Definitely a lot of pasta and oatmeal. I usually have a couple of Trader Joe's frozen meals in the freezer for a pinch also.

Oatmeal, of course, if often a go-to for breakfast. But lately, we've been (gasp) ordering pizza when the fridge is empty. Yes, not even remotely nutritious.

Now that my schedule is a little less crazy, though, I'm starting to cook and grocery shop again. In fact, I made a traditional Sunday supper tonight: roast beef, mashed potatoes, gravy, roasted asparagus, and sauteed spinach. S'more brownies for dessert. My husband was ridiculously happy, because he's a meat and potatoes guy. I think he misses my cooking a lot...

I usually whip together rice bowls or stir fries when I don't have much in the house - and I'm with you on the sushi craving. Gonna have to do those up soon!

although I complain when our pantry is barren, the meals that come out of that forced creativity are sometimes the best! And nothing beats the flavor of a lowly hunk of parm floating in sauce. Yum! Now I want to head into the kitchen and see what I can scrounge up... thanks for the inspiration!
