Today was the first freeeeeezing cold day that really made it feel like winter. I warmed up this morning with a bowl of chocolate banana gingerbread oats (1 cup unsweetened chocolate Almond Breeze, 1/2 cup quick oats, 1 tsp maple PB, 1/2 banana, T gingerbread crumbs).
We tried a new recipe this evening, Barefoot Contessa's Lemon Chicken breasts. We used skinless chicken breasts to make it a little healthier.
Lemon Chicken Breasts
(Adapted Slightly from: Barefoot Contessa)
1/4 cup olive oil
9 cloves garlic, chopped
1/3 cup dry white wine
Zest from 2 lemons
2 T fresh squeezed lemon juice
1.5 tsp dried oregano
1/2 tsp dried thyme
1 tsp salt
2-4 boneless chicken breasts (skin on or off)
1 chopped lemon (8 wedges)
Warm the oil over medium. Add the garlic and cook for 1 minute (don't brown). Remove from heat and add wine, zest, lemon juice, herbs and salt. Pour this mixture into a 9x13 baking dish. Put chicken on top of sauce, season, and tuck lemon wedges around the chicken. Bake at 400 for 30-40 minutes.

I like lemonade, and lemon in my drinks, but I don't like it in cooking!! But lime - I'd eat everything with lime if I could!
Lemon Chicken is a wonderful dish. Glad you enjoyed it. Hey, I noticed you are using a dry measuring cup for liquid ingredients, probably doesn't matter so much for cooking, but can really make a huge difference when baking. I know I didn't know there was a difference when I started cooking. Of course the best thing to do would be measure by weight if you have a scale.
Nicole - Thanks for stopping by! I don't worry about being precise when cooking - usually I free pour. For baking I use the proper measuring tools for wet/dry usually ... but there have been occasions when I haven't and it still turned out great! I don't have a scale yet, but haven't really felt the need for one - I suppose because I am more of a cooker than baker.
I think I use lemon the most in baking... I love lemon cranberry anything!!

I love lemon in cooking. I put it in most of my salads, a lot of chicken dishes, and love it for seafood. I keep lemons on hand to cut into my water or tea- I'm clearly a fan.
The chicken looks really good- it doesn't look dry, which is most important.
Do you remember I used to have a lemon tree? Now I wish I had it in my backyard again! The chicken looks lip-smackingly delicious. :-)

I love using lemon in everything...fruit salad, over salmon, in water. It's fantastically easy and makes me look like I know what I'm doing!
I like lemon - but in moderation! It can't be 'too' lemony. I bet I would like this recipe, though!
i do not use lemon as much, only when i'm marinating my chicken.. otherwise for fresh lemonade..
I'm obsessed with lemon. I love lemon chicken, lemon water, and lemon as a salad dressing. It's so fresh yum! i just bought lemon body butter from The Body Shop and I love it too. lol. Not for eating though...just to clarify!
