I haven't had the time this semester to do a lot of cooking. Luckily I cooked about 20 meals for my freezer at the end of summer, and did 3 months worth of meal planning to make things easier during these busy few months of full-time grad school and full-time work. It has definitely helped keep me sane.
I have the major urge to try something new, and if it can't be a new recipe, then it will have to be a product I haven't tried before. The kind people at Artisana sent me some samples of their products, and yesterday morning I tried the walnut butter. I used it in a bowl of banana, maple walnut oats.
Luckily, yesterday I also had the time to try a new recipe. I made Angela's Creamy Roasted Tomato, Garlic & Onion Coconut Soup. It was full of flavour (I added extra Garam Masala), and good for a cool Fall day.
Today I had a simpler, very-easy to make dinner - a Hippie Bowl.

In a word, my fall has been insane. I am worn out. And sick - although I am on the road to recovery, it's just taking way longer than I think it should. I hiaven't had much time to cook either because I have been around so little.
I did make some beef stew on Sunday though, which was delicious!
I was doing better about cooking a few weeks ago, but this month is a lot busier so I've just been flying off the seat of my pants. Not as fun. I have a lot of new recipes I want to try though, hopefully in a couple of weeks..
The soup looks yummy. My Fall has been insanely busy - I wish it would slow down!
I can't believe you meal planned for 3 months at a time! I can barely meal plan for one week. Lol!
Ooooh, I want to try their walnut butter and pecan butter, especially! I also bookmarked that soup recipe of Angela's and hope to make it this weekend...
I've always wanted to try the Artisana line of nut butters!! I've only had their coconut butter so far! YUM!

I made a kale/cannellini bean soup the other day. It's been the perfect companion to the cold weather. And while this isn't really a recipe, I've been loving grilled cheese sandwiches dipped in marinara. Perfect for busy days at work when I don't have time to fix myself a complicated lunch. =)

Yes, my fall has been busy, but thankfully nowhere near as busy as last year. I haven't officially started studying yet, though, and I need to!
I've tried a few new recipes, including one called Easy Salsa Chicken, where you brown chicken breasts, cook them in salsa for 15 minutes and then top with cheese. Delcious and fast. I've also pulled out the slow cooker, but no new recipes there yet. Just old faves.
Why haven't I tried that hippie bowl yet?! I honestly haven't tried any new food....I am soooo impressed that you were able to prepare so far in advance. Great idea!
