Vegan Mornings and Evenings ...

So far this week, all my breakfasts and dinners have been vegetarian or vegan.  I didn't plan it that way, however the hubby and I have started incorporating a lot more vegetarian and vegan meals into our regular meal rotation.  We don't miss the meat at all.

We had some creamy coconut rice with veggies and garbanzo beans on Monday, and a vegetarian chili on Tuesday.  This evening we went to 13th Avenue Coffee House for veggie/tofu/rice bowls.  


My best vegan breakfast this week has been chocolate overnight oats, layered with banana blackberry soft serve (made with just frozen banana and blackberries and a splash of almond breeze) in a pretty parfait.  These parfaits are one of my absolute favourite breakfasts to eat, and they are so summery.


Today was the first "full" day of summer, and it felt like it!  It was absolutely gorgeous, and we ate our dinner out on a deck.  

I am feeling pretty pumped that I only have 5.5 days left of work until I am on summer holidays for two months! 

For the first time ever I will be taking a class in July.  
I will have this class Mon-Thur from 2:00-4:30 from July 4th-25th.  
I want to make sure that I use the rest of my day productively.  

How would you spend your day and evening, if the only thing you HAD to do all day was go to class from 2:00-4:30 and you had no other responsibilities?  

Give me your play-by-play, and maybe I will be inspired by how some of you would use the extra time!

I would probably sleep in a little, but still get up around 8 or 9. I'd then go for a run or to yoga or do some sort of workout. I might spend some time blogging or doing another form of writing or cleaning my house. I'm sure occasionally I would just read a book or magazine, relax and do nothing :)

if i had all that free time i honestly would probably cook, photograph things, blog, and read.

Hm. I think my mornings would be for workouts, errands, and maybe prepping dinner so my evenings could be spent with the boy and meals would be easy to throw together.

Last summer my only responsibility was looking for a job... but I actually kept pretty busy. I helped out the 'rents with a lot of yardwork and fence-painting, went for a ton of walks and cooked and baked more than ever before. I bet being in class in July will keep you productive, but also leave you looking forward to August!

LOVE overnight oats! I have a hard time dealing with warm oats in the summer!

I've got a two-month break ahead of me too, since I teach piano lessons. I think I'll just be working 1 day a week. But there's so much fun stuff to do! Plenty of reading and writing, enjoying the company of friends and the outdoors, and travel!

I used to love summer school. I worked out a lot and hung out with friends a lot. It was amazing.

Yea for summer break being so close!!! For me, I would get up at 7:30, run, read blogs, and eat a yummy breakfast. Then I would grocery shop, cut produce and make something for lunch. After class I would sit outside and read a book and then make a delish dinner. After dinner I would knit and watch a movie!

I have the same question! I have to factor in driving but I want to use the rest of my time productively!

I would probably spend most of my day on the computer... working on the blog! ha ha, there is just so much I want to do and I never have time to do it!!

I would also go for long walks and go KAYAKING!

Love the veg meals you're creating and seeking out! So nice that you've got that free time - I'd probably go through my cookbooks and pick out one new recipe a week to try out, something that challenged me to seek out new markets or ingredients.

I find work or school times like that tricky.
I tend to waste the whole morning waiting to do the course or to go to school. It's something I have to work on!!

i would hate that class time. It's so odd to have to go somewhere smack dab in the middle of the day. I would eat breakfast, work out, run errands, eat lunch then go to class then come home to prepare dinner and then veg at the tv! Anyways, tell me about overnight oats...is it that good?
