Last night we had our friends Dalton and Emma over for dinner.
We prepared dishes that we have made a few times before, and everything turned out well.
We started with pico de gallo and guacamole, which we enjoyed with Sol beer.
Next we had beer battered coconut shrimp.
The next course was a black bean chipotle soup, with sour cream, lime and cilantro garnishes.
Our entree was poblano pepper crepes with Mexican rice on the side.
I am always very indecisive when it comes to dessert, because I am not a big dessert person, and I always fret about what people will like ... so I made 3 desserts.
Vanilla Bean Chocolate Pear Crumble a la Mode
Oreo Filled Double Chocolate Cookies
Pumpkin Gingerbread with Spiced Butter cream
They must have been hits, because by the end of the evening there were no cookies left, no pear crumble left, and only half a loaf ... and I only had a few bites of the crumble! Success!
