If you've been a long time reader, you'll know there was a time when I was on a huge oatmeal kick. I made oatmeal of all sorts, with a variety of different toppings. On Sunday morning Christopher and I wanted something different for breakfast, so I whipped up some mocha oatmeal. I used two parts liquid (unsweetened vanilla almond milk & coffee) to one part quick oats. I brought the liquid to a boil, tossed in the oats, stirred about 1 minute, and then removed from heat and covered for about 1 minute. I tossed a scoop of chia seeds in with the oats, but this is optional.
I put a bunch of toppings on the oatmeal including: pomegranate arils, hemp seeds, coconut, bee pollen, chocolate chips, and peanut butter.
Dinner on Monday evening was ribs with potatoes and salad.
On Tuesday evening we took my dad out for supper to Swiss Chalet.
This evening we're going to have chili and cornbread for dinner. We started the chili hours ago, and it's been lightly simmering away on the stove. I had made a few loaves of cornbread for the freezer, so we thawed one of those to go with it.
I started some Christmas baking tonight - oatmeal cookies, and shortbread, a Christmas "must".
I don't really eat much for baking, but I'll make Christopher one or two things each week in December until Christmas. I don't think he'll mind ;-)
