Anyone who has grown up in Saskatchewan has had puffed wheat cake (or squares as non-Saskatchewanian's might say). When I was a child, I don't think there was a day that this dessert was not in my house. My mom always had puffed wheat cake, rice crispy cake, chocolate chip cookies and cinnamon buns on hand ... at. all. times.
For some strange reason, I did not make puffed wheat cake until yesterday. Everyone thinks they have the best recipe for this, but they don't. My mom does. Her recipe is below:
Puffed Wheat Cake
3/4 cup corn syrup
2/3 cup margerine
1 1/4 cup light brown sugar
6 T cocoa
1 tsp vanilla
12 cups puffed wheat
Bring all but puffed wheat to a boil. Boil 3 min.. Pour over puffed wheat and stir well. Press into 9x13 pan with waxed or parchment paper. Let cool, then cut into squares.
