ou really need to try a VOO Parfait - you don't know what you are missing!





Chocolate Vegan Overnight Oats with Raspberry Banana Soft serve

- 1/3 cup quick oats
- 1 scoop chia seeds
- just over 2/3 cup unsweetened chocolate almond breeze

Mix together and refrigerate overnight. Layer with soft serve (Raspberry banana soft serve - 1 frozen banana, 1/4 frozen raspberries and approx. 1/4 cup almond breeze, blended together in Vita-Mix or food processor).





This breakfast is extremely filling, yet VERY healthy. I ate it around 9:30 this morning and it kept me full until 2:00 this afternoon.

For lunch I was craving eggs. I made Mediterranean baked eggs.

Mediterranean Baked Eggs


- 1/4 of a red pepper, minced
- 1 T feta
- 2 eggs
- 3 T almond unsweetened regular almond breeze/ milk
- 3 black olives, minced
- sprinkle of oregano and pepper

Mix into a greased individual baking dish, and bake @ 400 for 20 minutes.





I spent the afternoon running errands and shopping for back to work clothes. One week from today I go back to work! I cannot believe how fast the summer has gone by - I am going to savour the last of my days off.

Dinner this evening was a tofu and veggie stir fry.





The stir fry included: Tofu, Onion, Red Pepper, Zucchini, Baby Corn, Water Chestnuts, Sprouts, and Sauce (soy, hot chili sauce, sweet chili sauce).

Later in the evening I went out to play a card game with some friends. I had a small cup of soup, and 2 drinks, and stayed up past my bedtime (hence the late night/ early morning post).

What is your favourite ingredient to put in a stir fry?
Do you have any good stir fry sauce recipes? I would love some new ideas!

hmm...i'm not sure if i have any knew ideas for your stir fry. (sorry!) bok choy, pinneapple, edamame, does that help? :)

the one ingredient i absolutely have to have is red peppers. don't know why but stir fry just isn't the same without it. :)

My fav stir fry items are snow peas, bean sprouts & water chestnuts! Mmm, think I'll have stir fry for supper tonight! ;)

I think water chestnuts have to be my most favorite stir fry ingredient! So, so good.

I enjoy water chestnuts in a stir fry. I just love the added crunch. I usually just throw everything but the kitchen sink in the wok.

i love putting snap peas and carrots in my stir fries. and topping them with nuts is a good idea for crunch!

You and your parfaits. You should open up a restaurant/cafe!! I am so random with my stir fry dishes. I love the baby corn but almost never have any on hand. Bok choy is another fave.

peanut butter mixed with soya sauce and sweet chilli sauce...so good!! :)

I'm not a HUGE stirfry fan... but when I do make them, I love mango chunks and pineapple!!

Pretty overnight oats :) I love making that for my days off, that way I dont wake my hubby up with the blender in the morning lol My favorite stir fry ingredient is probably peppers, just because there are so many different kinds and each has its own flava!!

I love putting shrimp in my stir frys because it cooks up so fast. That and a little bit of brown rice, some frozen broccoli...perfection!

Oh dear, your eggs look so good! I don't even like eggs to begin with, so that's saying something :)

Baby corn is my favorite thing in stir frys...also love the water chestnuts and bamboo shoots!

My favorite ingredient for stir fry is probably sugar snap peas? Yum. Love the crispy texture of them.

I have yet to figure out a superb stir fry sauce... I had one that I used to make but then I found out about a gluten intolerance so most of the ingredients are off limits since they have wheat in them... I think the sauce had szechuan sauce, oyster sauce, and a chili sauce of some sort? It's something my brother concocted and it was pretty much out of this world so I am so sad that I can't have it anymore... :(

I put spaghetti squash in my stir fry! so yummy, cook though, of course. I also like using a really good black bean sauce with coconut milk! O my! my mouth is watering just tying about it! I have yet to jump on the "overnight" anything bandwagon, I'm just too impatient!

Yum! Stir-fries are a free for all! Anything goes! :) Broccoli is always in there. And butternut squash is so good.
