I couldn't sleep last night. I tossed and turned, wide awake until about 3:30 a.m.. When I pulled myself out of bed at 6:30 this morning, I was seriously draaaaaaaaaging. I needed a breakfast pick-me-up, and I knew coffee had to be involved.
I started my morning out with a Mocha VOO and PB Banana Soft serve Parfait.
PB Banana Soft Serve
1 frozen banana
1 t PB
1/4 cup milk
Mix in Vita-Mix or food processor until soft-serve consistency.
Mocha Vegan Overnight Oats
- 1/3 cup quick oats
- 2/3 cup coffee
- 1 T cocoa
- 1 tsp vanilla
- 1 scoop chia seeds
Mix and put in fridge overnight. Layer with soft serve in the morning.
Lunch was 2 slices of leftover Thai pizza from Saturdays lunch, 1 cheese string, and a clementine. In the afternoon I had an icecap that a very sweet colleague bought for me!!
Dinner this evening was a red curry with chickpeas, served over organic kamut.
Dessert was one of the 3 bite muffins I made the other day.
Do you have trouble sleeping before big days or exciting events?
How do you get yourself to fall asleep?
I find that the harder I try to fall asleep, the more trouble I have.

Once you have kids, just being ABLE to sleep is exciting so you don't waste as much of it being awake. I do have a hard time turning my brain off though, it just keeps going and I swear I fall asleep in the middle of a to-do list every night.
I NEVER used to have problems with sleep, but this summer I really, really have. It's annoying! When I was really stressed at work a few weeks ago I was almost never sleeping through the night. I'm sleeping a lot better now, thank goodness!
I have no trouble falling asleep at all. Even on the day before something exciting, I always have to worry that I might sleep too deeply and not wake up the day after.
Oh my gosh, I am a TERRIBLE sleeper when I have something coming up the next day!

I am the worst sleeper- I never fall asleep like a normal person and I think I stayed awake the whole month before my wedding!
Happy back to school! I really have trouble sleeping before big days and exciting events. I'm starting my Masters program in a week and I'm sure I'll have a bit of trouble the night before the big day :)

If I have to wake up for something important in the morning I constantly wake up to check the clock all night long. it's really annoying! Glad your first day went well!
if I'm really excited about something...I can't sleep: big trips, big meetings, big events...so I try to get sleep 2 nights before the big event..that way at least I'm still semi rested!
Yes, I always have trouble sleeping when I have a big "event" the next day! And, just like you, the harder I try to fall asleep the more trouble it is......
It's so funny hearing all the teachers dreading the start of school or counting down till summer break. I never really thought of teachers like that when I was in school--that they were just as sad about the end of summer as we were!
It's hard for me to get some sleep when I'm excited about something going on the next day. I usually try saying some prayers or doing some deep breathing to get me to sleep.
I have trouble sleeping every night, but definitely moreso when there's something big the next day. I hope you sleep better tonight!

I have never been a great sleeper... falling asleep is such a challenge for me. It was better for awhile but this summer, it's been terrible. One thing that helps me is wearing a sleep mask. Which makes me a complete dork... but it seems to help me calm down & relax a bit when I am trying to fall asleep...
i can NEVER sleep before something big!
If it's at night, I listen to a relaxation album I downloaded from iTunes. It really helps! But if I wake up way too early or in the middle of the night, I have trouble falling back asleep, too. Luckily, it doesn't happen that often. Sometimes I'll recite a rhyme in my head or count and that helps.
I always worry about sleeping in on race day but have always ended up being up before the alarm goes off!
