Getting Away!

We caught a flight early Thursday morning, and were in Denver by 9:00 a.m..  Since my birthday was on Wednesday, and Christopher's was on Friday, we thought we'd celebrate both by getting out of town.  Also, Bonobo, a British DJ we love, was spinning in Denver on Friday evening.  Little did we know, we were missing Skrillex on Wednesday evening, otherwise we would have made sure we were there for that too.

We had bagels in the airport here, while visiting with Christopher's sister, who was in the airport too, heading to Ann Arbor Michigan to speak at a conference (go Victoria)!!


This held us over until we made it to Denver, and got a substantial breakfast.  We went to Jelly, where I had savoury French toast, with roasted turkey, bacon, other ridiculous things, and a cheesy gravy.


Yum!!  The coffee was horrifying though.  I've never had such thick, terrible coffee in my life.  It didn't even lighten after we put about five creamers in it.  We never put that much cream in our coffee, if any!  We did not finish it.

We spent the day wandering around, stopping at pubs here and there.



Dinner was at a place we'd visited before, Pita Grill & Hookah.  The food here is incredible.  We shared some baba ganoush, and cucumber salad, which is basically a cold, yogurty, cucumber soup.  It's insane.


We called it a night after dinner, as we had a full day planned for Friday, Christopher's 30th!!

My Birthday

Today is my birthday, and also the end of my work week!

I woke up to some fabulous prizes from my sweetheart.


Work was good, and one of my students brought me a delicious treat!


Christopher took me out for dinner to my favourite restaurant, Korea House.  I ordered the bee bim bop, as usual.


Now we're headed to bed, as we have a flight early tomorrow morning!

Ten on Tuesday

1)  We spent the holiday Monday doing some yard work, and then relaxing in the backyard.  Following that we had homemade French fries, and caught up on some TV shows.


2)  We went for dinner to The Lil' Belizean the other day.  We shared a Jamaican patty to start, and then had chicken with rice and beans, and coleslaw/potato salad.  The food doesn't look appetizing, but it's good.


It's very simple cooking, with no added salt.  Everything is really fresh.

3)  My birthday is tomorrow (Wednesday), and we're going out for dinner to celebrate.  Christopher's birthday is on Friday, and we'll be away, celebrating in style!  We got some fabulous prizes from Christopher's parent's on the weekend, and look forward to enjoying those.

4)  I tried the chicken fried steak sandwich at Smokin' Okies recently.  It wasn't very good.  The mac and cheese was okay.  I've tried this place a few times now, and have never really been impressed.


5)  I have no idea what to be for Halloween this year.  What are you dressing as?

6)  The Screaming Daisies released their second album the other day!!  If you want to support local (to Regina), original music, the discs are $15 a piece.  We'll ship!

7)  Today was so beautiful; it hit 23 C, which is great for mid-October.  It's so nice to still be rockin' sandals this time of year.  What's the weather like where you are?

8)  Dinner last night was beef stew



9)  This evening we had butter chicken with basmati rice.



10)  We have some really fun weekends planned for the rest of October!  One we're flying away, one we're road-tripping, and then we have a friend's Halloween party!  What exciting things will this month hold for you?

Thanksgiving Weekend

What a great long weekend!!  We had a fun time in the kitchen on Friday evening.  Breakfast on Saturday morning included scrambled eggs, sausages, potatoes, and delicious lattes.


Later in the afternoon we went over to friends Chris and Heather's house to meet their new puppy Terry.  He is so cute!! 


We all ordered some pizza from Juliana's Pizza, and it was fantastic!


On Sunday morning we had another leisurely breakfast, which included an omelet, potatoes and bacon.


This held us over until we got out to Indian Head later in the afternoon, for Thanksgiving dinner at Christopher's sister and brother-in-law's home.


The food was delicious, and the company even better.


Dessert was pavlova, one of the lightest, tastiest desserts ever! 


Christopher's mom brought a carrot cake to celebrate both Christopher's birthday and mine, which are both later this week.


It was the best carrot cake I've ever eaten.  Ever.

The best thing about this weekend, is that it's not over.  We're looking forward to a relaxing day at home today.

Busy in the Kitchen

We had a productive evening last night.  We made about nine dozen perogies, many of which we'll be sharing with family.


We also made two pumpkin, gingerbread loaves, and some pumpkin pie, brownie "cupcakes".


It's easy to accomplish a lot in no time with teamwork in the kitchen!

We only have fun things going on this weekend, including a delicious Thanksgiving dinner tomorrow evening with family.

Korean Fresh Rolls

We love creating fusion dishes; this one combines our favourite type of cuisine, Korean, with Thai.  Fresh rolls are really easy to make, and you can fill them with whatever you like.


We started by marinating some pork.


Korean Pork Marinade


1 tsp gochujang paste (Korean grocery store)
1 tsp sesame oil
3 T mirin (or cooking wine)
1 tsp soy sauce
1 tsp hoisin
salt, pepper, ginger powder, garlic powder - to taste

Then you just cut up whatever you want inside your fresh rolls.  We used chopped kimchi, green onion, and cucumber.

Pour boiling water over rice noodles.  They will soften right away.  Drain the water.

Dip rice papers in hot water until they just start to soften.


Lay the paper down and fill with noodles, a couple pieces of pork, and the veggies.  Roll.
 
We dipped ours in a Korean dip.


Korean Fresh Roll Dip

2 tsp gochujang paste
enough water just to cover the paste
1 T brown sugar

Mix well.

Enjoy!
