Monday Re-Cap:

Today was a BEAUTIFUL day!! Spring has definitely sprung in Regina. It was about 14C.
I started my day with a bowl of banana maple walnut oats:

(1/2 cup maple coffee, 1/2 cup almond milk, 1 t maple flakes, 1/2 banana, 1 tsp walnuts).

Lunch was leftover bison and Saskatoon berry ragout on rice, with an orange and a yogurt:

Dinner was a veggie burger and a salad with mixed greens, tomato, cucumbers, Gruyere, bacon bits, and Saskatoon berry vinaigrette:

I went for a run this evening. I am pretty crappy. I can only run about a quarter mile at a time, and then I am huffing and puffing like the big bad wolf. BUT, I have improved (yes, I used to be worse!) When I started I could barely run a minute. You should have seen me. I was pathetic. Still am, but at least I am improving!

My next run on the C25K plan is about a quarter mile MORE than what I am doing now. I don't know how I will run a half mile straight ... then walk a couple minutes, then do it again. I am scurrrrrrrrrrred!

On Friday morning the hubby and I will be leaving for NYC! We will be there for a week.

Are any NY bloggers interested in a blogger meet-up?
Let me know!!

What do you have planned for the Easter weekend?

This will be the first time my hubby and I won't be with family over Easter. We will have to check out the Easter Parade in NY, and see what else is happening! We will also be there for the hubby's 29th B-Day which is on April 6th!

BIG Giveaway Announcement

W

elcome March!

I am declaring March "Get Back on Track Month."

I set some goals for 2010 and I haven't been paying much attention to them over the past couple of months. I was busy enjoying my new found freedom from school and forgot to workout, read books for fun, and do a lot of the other things that I had planned to do when I had more time.

January and February were for recuperating. March is for accomplishing.

Things I want to accomplish in March:

1) Start swimming (I know how to swim, but I want to become a better swimmer).
2) Do some sort of work out 4 - 5 days per week.
3) Try new recipes!
4) Read 2 books for fun (minimum).
5) MAJOR Spring Cleaning (and organize).

I started off this first day of March with a 4km (2.5 mile) jog/ walk DVD. I am registering for my first 5K race which will take place on May 30th!! I am very excited!!

Before I get to my eats, I wanted to let you all know that the winner for the Skin MD Natural Shielding Lotion will be chosen tomorrow evening. If you haven't entered yet you still have time!

Breakfast this morning was a lovely bowl of oats:

(1/2 cup coffee, 1/2 cup almond milk, 1/2 cup oats, 1 T almond butter, 1 T maple flakes, 1 scoop chia seeds).

I packed an Amy's tofu stirfry, an orange and some cheese for lunch:

Dinner was a salad with red peppers, mushrooms, goat cheese, and balsamic dressing:

And some spinach pizza:

Ask Me Anything!

F

ollowing with a very popular blogging trend, I have opened the lines of anonymous communication with an "Ask Me Anything" feature.

Have a (friendly) question for me that you want to ask anonymously? Click here to do so, and I will share some Q and A with you all as the questions come in. Just be sure to click on the anonymous box if you want to remain anonymous!

It is finally starting to warm up in Regina, and I can sense that spring is not too far away - just the idea of it is making me giddy! I cannot wait to start doing the C25K (couch to 5k) program again. I didn't make it very far this fall, as it started to get too cold. The second the snow starts to melt I am getting my running shoes on! It is so foreign to me to be excited about running, but for some reason I really, really want to run.

Are you a runner? If so, what do you love about it? Did you love it right away? Were you good at it from the start or did you suck like I do now? :-)

My eats this morning were simple, but delicious (and very carb-laden now that I look at the pics). Breakfast was a lovely bowl of banana and coffee oats topped with almond butter and maple flakes:

The maple flakes are SO good. I am not a huge fan of maple flavour typically, but I love these. They add a little crunch too.

Lunch was leftover spaghetti and meatballs, and an orange:

My water bottle is SO dented (from dropping it constantly) that people at work were making fun of it. Hehe. One of them said it looked melted. I don't think you can melt metal that easily, but who knows. It does get HOT in Regina in the summer time.

For dinner I made chicken chow mein:

I plan on having some fruit or veggies as a snack and curling up with the hubby to watch some American Idol! I just love that Ellen is the new judge!!

G'nite.

Got a question for me?

All About the Toppings

W

hen it comes to toppings, I like to load 'em on.

Take for instance my oatmeal this morning:

Banana oats (made with 1 cup almond breeze, 1/2 mashed banana, 1/2 cup quick oats):
- 1 T chia sees
- 1 T coconut
- 1 T maple flakes
- 1 T apple butter
- 1 t walnuts

For lunch I topped the leftover tortellini (what I didn't use in the soup yesterday) with some tomato sauce:

I also had an orange and some cheese:

After work I went for a pint, and also shared some calamari with friends.

Dinner tonight was a pita pizza - loaded up of course!! I topped 1 whole wheat pita with:

- Green Pepper
- Onion
- Tomato
- Pineapple
- Green Olives
- Cheese

I then baked it for 10 minutes at 400 degrees.

Perfect pita pizza every time.

And it is official - I am addicted to juicing. I can't stop.

This evening I juiced:
- 2 cups honeydew
- 1 large pear
- 1 1/2 green peppers
- 1 grapefruit

Refreshing!

There is something about drinking all those nutrients down - I swear I can feel them seeping into my blood. I like to think about it while I drink it.

Hehe.

TGTIF (Thank Goodness Tomorrow is Friday)

Any big plans for the weekend?

"Bitten" and my first juicer experience

G

ood afternoon blog faces! Sorry I didn't post yesterday - I will recap now:

Breakfast yesterday was a green smoothie with almond breeze, and a banana ...

Chia seeds ...

2 packs of amazing grass ...

And some peanut butter ...

Voila:

At work I ate a chocolate brownie, and for lunch I had a small chicken pita from Extreme Pita, an apple sauce, a piece of cheese and an orange.

The hubby and I went out for dinner last night with our friends to celebrate our buddy Brad's 31st b-day. We started the night at a restaurant called "Bitten."

For an appetizer the hubby and I shared coconut prawns. I was clearly very hungry, as I devoured them before remembering to take a pic!

My meal was a honey mustard pork pizza (mini) with a spinach salad on the side:

The salad was good, but the pizza was blah.

I am not a big dessert person, but the vanilla marscapone parcels caught my eye. The hubby and I shared them, and they were pretty darn good.

I also had a couple bevvies throughout the night (3 I think).

This morning I decided to try out my new juicer for the first time!!! I bought a juicer at Costco a couple weeks ago, and I was debating whether or not I wanted to keep it. I don't like how big it is and how much room it takes up on the counter, but I am worried if I put it away I will never use it. I finally decided to keep it.

This morning I juiced the following:

1 grapefruit
1 orange
1 apple
1 yellow pepper

I was very impressed with how the juicer worked, and how smooth the juice was. When I checked the pulp container, there was only about 1-2 tablespoons to toss out! 4 servings of fruit/veggies just like that!!

This juice was SO good! The grapefruit definitely "made" the juice. I am sold.

With my juice I enjoyed a bowl of maple, brown sugar oats, featuring these maple flakes that I stumbled across in Safeway the other day:

I am going to spend the day cleaning/ organizing and running errands.

This evening my best little buddy is coming over for a sleepover!!! I can't wait!!!

Being an auntie is seriously the BEST!

Do you have any nieces or nephews? Tell me about them!!
Do you see them often? We try to see Giovanni once a week :-)
