Breakfast

Exciting news - I'm the featured member on Food Bloggers of Canada for today!!  Check out my interview here

This past weekend was really nice, because we cooked breakfast at home for the first Saturday in a month!  We had cherry smoked bacon, a veggie omelet and breakfast potatoes.


On Sunday we had breakfast sandwiches, with bacon, spinach, tomato, red onion, egg, mayo and mustard. 


During the week, breakfast has looked something like this:


We're looking forward to cooking some more delicious breakfasts this weekend.  We also have to do some yard work to prepare for fall, and then curl up on the couch and relax!

Happiness

Like all people, I've had my share of ups and downs.  I've always been a positive person, but I have gone through periods of discontent, lackluster happiness, and downright sadness.  The older I get, the more confident I become, trusting in my own capabilities, reasoning, and life choices.  I have reached a point in my life where I've never been happier, and I only see this happiness increasing.


Things that have lead to this place for me:

- Learning to say no.
- After saying no, not defending my answer.  "No, I am unable to" (or "no, I'm not interested") is enough.  Giving an explanation or excuse often leads to accepting a smaller/slightly altered version of the same request, or being convinced to answer yes to the initial request.
- Realizing and accepting that I am not responsible or accountable for other peoples' decisions, and not letting choices of others get me down.
- Following my heart/ not doubting myself, even if it means taking a risk.
- Paying myself first.  Pension, bills, vacation savings, and other savings get taken care of right away.
- Not buying anything I cannot afford.  
- Stop worrying so much.  I used to worry a lot more, perhaps because I was venturing down new paths I had never been down.  Whatever the case, I don't worry as much anymore, and this has made me happier.
- Not taking on any more responsibility than I absolutely have to.  I have my job, and a home, but that's where I draw the line.  I'm not interested in working overtime, or taking on extra jobs, or scheduled activities, or pets ... or even children. 
- Being comfortable with not having a million responsibilities and always being on the go (with full time work, full time school, coaching, etc. etc. etc.).  I've learned to relax a lot more.
- Age ... the older I get, the happier I am.
- Education ... the more I get, the happier I am (although this is likely confounding with the age thing).
- Confidence, and making choices that I believe in, not worrying what others will think of me or my decisions.  I worry what Christopher will think, as we are sharing our lives, but other than that, to each their own.  I don't worry or think too much about the decisions that other people make, unless they hurt someone I care about.
- Most importantly, choosing happiness.  I am a firm believer that, for the most part, happiness is a choice.  How we react to something, the perspective we take, our outlook on life ... these are choices.  Some people choose to be grumpy and miserable, always expecting the worst, and just being negative.  I choose to be a happy, positive, expect the best (but be prepared for the worst), kind of person.

To me, happiness is:

- Enjoying and savouring the now, and not wishing away the days longing for what's to come.
- Being content, and happy with the status quo in nearly, if not all, areas within my control.
- If not completely content or happy with one of the areas within my control, actively working to change that.
- Being happy with what I have, and not wanting bigger or better, or more.
- Being near my loved ones.
- Very little attachment to physical objects.  I don't hold much sentiment in any object, as I feel that then the object holds me.
- Always trying something new, whether it's a new food, a new vacation spot, or listening to a new band.
- Taking joy in other peoples' happiness.
- Not living vicariously through anyone.

Five on Friday

1)  A new cookbook arrived in the mail for me today!!  This is the first book by Jessica, a blogger I've been reading for many, many years.  I'm so excited to break it open.


2)  On Wednesday evening we went out for dinner, and then to see Lucy in the theatre. 


3)  After their jam on Tuesday the boys fixed the basement bathroom door (yay!).  After the major rain we had a while back, the floor shifted a bit, and the door wouldn't close properly.  Nothing Scott's planer couldn't fix :-)  His girlfriend Nicole also sent some homemade cheese for us to try.  I like these people.


4)  The winner of the lunch kit has been contacted ... it is Karly!  Thanks for participating everyone!

5)  The Bulk Cheese Warehouse in town now carries Montreal smoked meat, right from Montreal.  I had to buy some, and we had sandwiches for dinner the other night.  It was great!

Roadtrip

On the Labour Day long weekend we went on a road trip to catch a weekend music festival.  We had such a great time soaking up sun, and taking in the music of Jack White, The Arctic Monkeys, The Smalls, Death Cab for Cutie, and Serena Ryder, just to name a few.  We had VIP passes, which was great because the line ups in the regular section were insane.  We ate poutine (because we didn't have enough in Montreal), and some absolutely incredible sandwiches from a Vietnamese food truck.


After the show on the Friday night we went with some pals to the sweetest loft I've ever seen.


The hidden staircase to the basement was pretty darn cool ...


On Saturday morning we were up bright and early to meet friends Ryan and Tanis for breakfast.  We also got to meet their precious little boy for the first time!!  We had a really nice visit, and then were off to the park for the concerts again.


We got home on Monday evening and ordered Lang's Cafe for dinner.


The leftovers were great for lunch today.

Back to School Giveaway

Well, it's that time.  For many, today was back-to-school day.  I don't think of January 1st as the start of a new year, but instead back-to-school time has always felt more like the start of a new year to me.  The best part about going back to school was always the back-to-school shopping.  When I was a kid, in addition to school supplies, I also got a few new outfits, shoes, a backpack, and a lunch kit.

As I got older, I started using plastic bags to carry my lunch; this is quite wasteful, as they get dirty, and I usually toss them out.  I was happy when the kind people at Dudley offered to send me a free lunch kit for the new year, and offered to give one to one of my readers!


The Fully Loaded Lunch kit is really durable, and it has a handle, which is great for someone like me who is always juggling about eight different things, while trying not to drop my lunch.


You can stand it upright or on it's back to make it easier to store in the crowded fridges in your school or workplace.


The inside lining helps to maintain temperature, and it's easy to clean.


There are also a few different pockets to put smaller snacks, utensils, condiments, etc..


The zippers are durable, and I could definitely see this kit lasting me a long time.  No more plastic bags for me!

Two Nights Out

Last week we had two evenings out.  On Wednesday we went to Christopher's parents' home for dinner and a visit.  We had some cheese and crackers to start.


We also ate the best chicken wings ever:


And some salad, garlic bread, and lemon, chicken pasta:


The meal was soooooo good, but to top it all off, we had Saskatoon berry perogies and an apple cake for dessert.


We had a wonderful evening!

On Thursday we went to a really awful mall in town to try the Korean food in their food court and catch a movie


The Korean food was tasty, and a really good price.  I had the beebimbap, which came with miso soup.  I ordered a side of kimchi on the side, because ... yum.


When we were done eating, we walked through the mall to the movie theatre, and saw The Purge: Anarchy.  We liked this better than the first Purge movie.

Our weekend was spent out of town at a music festival.

Easy Creamy Celery Soup

I think I could eat soup for every meal.  I love it.  This soup is an easy, healthy soup, that is loaded with vegetables.


Easy Creamy Celery Soup 


1 stick unsalted butter
1 regular sized package of celery, trimmed, and chopped
2 large white potatoes, finely diced
1 yellow onion, finely diced
salt and pepper
3 cups chicken broth
1 cup milk
1/4 cup fresh dill, or about 2 T freeze dried, or 1 T dried

Optional: Top with the celery leaves, sour cream, kosher salt

Heat the butter in a large pot on medium.  Once melted, add the celery, potatoes and onion.  Cook on medium for about 10 minutes until the onion is softened.  Add the chicken broth and milk.  Cook on low until potatoes are tender (about 15 minutes).  Add dill.  Add salt (to taste) and some pepper.  Add a bit more salt.  Puree in a blender.  Put back in pot on low and check seasoning again.  Serve with the optional toppings if desired.
