Easy Tortellini Soup with Spinach


I'm sure you've all heard, numerous times, about the health benefits of leafy greens.  They truly are some of the best foods you can eat, and in our home, we love them.  When Sobeys approached me about partnering up this month for their Let's Eat Better Together campaign, I jumped at the opportunity.  Their Power up with Greens program, that is part of this campaign, is aimed at encouraging Canadians to incorporate more greens into their favourite meals.

The tortellini soup we made tonight is so easy - easy enough for a quick weeknight meal.  It uses an entire bag of baby spinach, and you wouldn't know it!  Spinach shrinks down a lot when cooked, so it's a great addition to soup; you can add a lot, but it doesn't take up a lot of room.


Easy Tortellini Soup with Spinach

2 T butter
8 cloves of garlic, minced
1 litre regular chicken broth
170 g fresh cheese tortellini (use the Compliments brand with herbs in it for a little extra green!)
14 oz can diced tomatoes
10 oz bag baby spinach (rough chop if desired, but not necessary)
Salt & Pepper (to taste)
Parmesan cheese
Fresh basil, chopped

Heat the butter on low in a pot.  Add the garlic, and cook about 1 minute.  Add the broth, cover, and bring to a boil.  Add the tortellini, cover, and cook about 4-5 minutes.  Add the diced tomatoes (including the liquid), and simmer about a minute.  Salt and pepper to taste.  Add the spinach, and stir well.  Let wilt.  Once wilted, serve the soup with grated Parmesan cheese and basil.

Easy Creamy Celery Soup

I think I could eat soup for every meal.  I love it.  This soup is an easy, healthy soup, that is loaded with vegetables.


Easy Creamy Celery Soup 


1 stick unsalted butter
1 regular sized package of celery, trimmed, and chopped
2 large white potatoes, finely diced
1 yellow onion, finely diced
salt and pepper
3 cups chicken broth
1 cup milk
1/4 cup fresh dill, or about 2 T freeze dried, or 1 T dried

Optional: Top with the celery leaves, sour cream, kosher salt

Heat the butter in a large pot on medium.  Once melted, add the celery, potatoes and onion.  Cook on medium for about 10 minutes until the onion is softened.  Add the chicken broth and milk.  Cook on low until potatoes are tender (about 15 minutes).  Add dill.  Add salt (to taste) and some pepper.  Add a bit more salt.  Puree in a blender.  Put back in pot on low and check seasoning again.  Serve with the optional toppings if desired.

Curried Root Vegetable Soup

This soup isn't pretty ...


But it's super easy, full of flavour, and great for a healthy weekday meal.  We make a batch of homemade soup at least once a week, and this one was created on a whim.  We were planning to make a stir fry, and somehow this happened:

Curried Root Vegetable Soup

2 large parsnips, finely diced
2 carrots, finely diced
1 small white onion, minced
2 T ginger, minced
chicken or veggie broth (just to cover veggies)
1 can coconut milk
2 tsp curry powder
salt to taste

Toss all the veggies into a dutch oven pot.  Pour broth over to cover.  Bring to a boil, then simmer for 25 minutes.  Put in a blender and puree.  Return to the pot.  Stir the coconut milk and curry powder, and season to taste.



We enjoyed the soup with a tossed salad and some homemade bread.

Butternut Squash Soup

Last week I went to a cooking class for a friend's bachelorette party and we made a flavourful butternut squash soup.  I adapted the recipe slightly, and the hubby and I enjoyed it for dinner tonight.

 

Before making the soup you need to roast a large butternut squash (or two small ones).  

Roasting a Butternut Squash

Cut the end off the squash:


Slice the squash lengthwise and scoop out/discard the seeds:


Spray a cookie sheet (or use parchment) and roast the squash skin side down for 45 minutes-1hour @ 400:


Once the squash has cooled you can scoop the insides out and discard the skin:

 

Butternut Squash Soup

1 T olive oil
1 large onion
3-4 cloves minced garlic
2 T fresh minced ginger
1 liter low sodium chicken/veggie broth
1 can coconut milk
Insides of 1 lg or 2 small roasted butternut squashes
Salt and Pepper to taste

Heat the olive oil on medium.  Add the onion, garlic and ginger and cook for a few minutes.  Add the broth, coconut milk, and squash and simmer for about 20 minutes.  Puree with an immersion blender (or regular blender).  Sprinkle with cilantro, grated cheese, or whatever you like!
