Last night for supper the husband made a delicious BBQ meal of orange chipotle salmon, sweet potatoes, and corn. I devoured it :-)

The fish was the most tender and moist I have ever had, yet still cooked right through. I think it was because it came with the skin on one side. It tasted SO fresh.

In the evening we went to a friends house for her house warming party. We picked her up a little house warming gift - a money tree!! Haha, I didn't even know they had such a thing. It is just a little, cool looking plant. At her beautiful new home I nibbled on a few of these:

And a few chips, and 2 glasses of red wine. It was a fun evening with friends. This morning the husband and I are going to meet my family for breakfast at Smitty's. I love going out for breakfast! Have a good day peeps!

Lunch

Lunch today was some thin crust Ristorante Spinach pizza (the pieces are tiny - hence 4 of them), and some veggies to round out the meal. Hmmm ... I should have had some protein now that I think about it.

I went to work for the afternoon and had a black coffee while I was there. I came home from work to a clean house (thanks hubby), and dinner started and ready to BBQ. I had a pickle while waiting for the husband to make dinner:

Ugh, my tummy is growling! I really worked up an appetite from working so hard this afternoon. Stay tuned for a supper post :-)
I didn't know what to have for lunch yesterday, so I tried to use up some of the food in our fridge. I roasted some red/green/and orange peppers and then heated up some brown rice, mixed beans, and terriyaki sauce and mixed it all together. It was satisfying and delicious.




For dinner husband and I went out to celebrate my new position at work. I didn't bring my camera because it is too big (I am buying a smaller one that I can carry with me). We went to a restaurant called "The Free House." Husband and I shared a small spinach salad (spinach, carrot, almonds, Brie, and a mango pineapple dressing). It was excellent. For my meal I had a small super thin crust pizza with chicken, mandarin orange, and BBQ sauce. It was really good too, and I ate everything except the crust. I am NOT a crust lover. To drink I had the worst Mojito I have ever had.

Later in the evening we went to a friends for a game night :-) I had a couple of beer and stayed up way too late. That means that I slept in today ... so you won't see a breakfast post - it is lunch time. Uggghh ... what a waste of a morning!

Like I said in my rushed, late night post yesterday ... I had a CRAZY busy day, but a good day ... and therefore no time to post or take pics. The only pic I got was of my breakfast from yesterday:

This morning I was up early, and had to be at a meeting by 9:00. I grabbed breakfast on the run, but still tried to find a healthy option by going to Subway. I ordered a 6 inch whole wheat ham and egg sub with tomato, cheese, banana peppers, and a tiny bit of light mayo.

Sorry for the blurry pic. I also had a coffee with it - of course!

I am making lunch right now, and was trying to use the microwave ... but it died on me :-( I don't know if I blew a breaker, or if it is broken. I will wait until hubby gets home and let him have a look at it, because I have better things to do :-) Hehe.

Busy Day - No Time to Post

Today was CRAZY busy!! I was not near my camera or computer ... but this is what I ate today anyway:

Breakfast:
- Waffle (husband left me waffle batter in the fridge again!!) which I topped with 2 T whipped cream and a tsp ground flax seeds. I had a little syrup on the side to dip. And coffee.

Lunch:
- I was trying to make it between 2 appointments with little time in between, so I stopped at Costco and had a slice of pepperoni pizza and a water.

Dinner:
- Left over Boeuf B. from yesterdays dinner - It really was even better today!

Evening Snack:
- A mini, light toffee frappaccino (sp?)

Julia Child's Boeuf Bourguignon

In the spirit of Julia and Julia, which is a GREAT movie, I decided to make Julia Child's legendary Boeuf Bourguignon for dinner tonight! But first ... lunch!

I had a tuna sandwich on whole wheat bread around noon. Then I walked to the grocery store to pick up all the ingredients for my Boeuf Bourguignon. I also made a stop at the liquor store for 2 bottles of French wine - Chateau Courteillac Bourdeaux 2007. One bottle was to go in the dish and the other was to enjoy with husband when it was done!

Now, let me tell you, this dish is rather time consuming! Not a whip it up in an hour kind a thing by any means! I started cooking around 1 and was kept pretty busy until about 5:30. There are MANY steps and basically 3 recipes in one (you have to use 2 different recipes to prepare the onions and mushrooms, and both are found in a different part of the book).

After you simmer the bacon, you dry it, saute it, then remove it, then dry the beef, then add it and brown, then remove the beef, add the veggies and brown them:

then add a bottle of wine and some spices and broth. Then you cook it for a long time in the oven. Meanwhile, you prepare the baby onions:

And then the mushrooms:

Julia is very specific about how to do each of these steps properly (so the mushrooms don't shrink etc.). Once the meat has been in the oven for a while (about 3 hours), you take the liquid out and reduce it.

This is the meat and veggies without the sauce.

Once you have reduced the sauce, you put the onions and mushrooms on top of everything and pour the sauce over:

Julia suggests serving this over boiled potatoes, so that is what we did!

And 1 glass of red wine to go with it! It was delicious! The recipe says it is even better a day or two after when it is reheated, so I can't wait to enjoy more of it over the next couple days!

Debut of the GREEN Monster!

Look what came in the mail!!!!!

Amazing Grass sent me samples of each of their 5 drink mixes (and it only cost about $2.50 to get them here). I have been wanted to try these since I saw them on Caitlin's blog, and I couldn't wait to make a GREEN Monster! Score!! But first ... breakfast:

I made what I like to call "Mocha Coconut Oatmeal." I usually am not a fan of oatmeal, but this I like. It includes:
- 1/2 cup coffee (I took from the pot I made for the morning)
- 1/2 cup unsweetened vanilla Almond Breeze
- 1/2 cup organic quick oats
- On top I sprinkled a little shredded coconut and some mini chocolate chips

Delicious Mocha goodness!

For a mid-morning snack (got up early today for once!!) I made my first GREEN Monster!! Green Monsters are very popular in the food blogging world from what I have discovered. I think Angela started the trend! Anyway ... I decided to start with the most basic of the samples, the plain old GREEN SuperFood:

I mixed it with 3/4 cup unsweetened vanilla Almond Breeze and 1 banana and blended it real good in my magic bullet:

I pounded it back, and to my surprise ... It wasn't too bad!! It actually tasted pretty alright. The banana was probably a necessary addition, because it really helped to kill the grass taste. I will DEFINITELY be buying a pack of these! What a great way to get my greens in! All the ingredients are organic, dried green foods that are grown in the best conditions for the environment and for health. No fillers, no crap, no gluten, soy, or GMOs. A whole food supplement that provides a ridiculous amount of vitamins and minerals! I am sold.

I cannot wait to try the other kinds ... if this one is pretty good, I can only imagine that the chocolate one will be even better!

Have you had a green monster? Many people make them with fresh greens, but I think the Amazing Grass packets are much easier, and maybe/probably more potent! What do you use in your green monster?
