Good evening! I hope you all had a wonderful Friday! I am so happy it is a long weekend. It is Thanksgiving weekend in Canada, so you know what that means - GOBBLE GOBBLE.
I had my pics taken of lunch and then I decided to go out for lunch with my co-workers and didn't have my camera. So sorry no pics of lunch/ snacks. This is what I had this afternoon:

- 3 small pieces of bread (from Eastside Mario's homeloaf - baguette)
- About 1 cup of pasta with grilled chicken and a vegetable cream sauce
- 1 icy square chocolate
- 1 mini coffee crisp (Halloween candy that is floating around the school)
This evening I had a pint glass of Guinness Beer :-)

Vegetarian Mexican Risotto

This is my portion - topped with Mango Peach Salsa
I must say, this was pretty darn good for coming up with it on the fly!
It was easy, healthy, delicious, and the hubby liked it too!
After dinner I bought some stuff for breakfast tomorrow - we are having brunch guests!
Now I am cleaning the house, and then heading to bed - I am cool like that on Friday nights - Jealous?
This is how you make it ...
- Mix 1 pack of taco seasoning into 3 1/2 cups water and set aside (yes it is veggie friendly)
- Melt 1 T of butter
- Add 1 chopped onion, 2 cloves garlic, 1 chopped orange bell pepper
- Sauté 3 minutes
- Dump in 1 1/4 cup Arborio rice and stir until coated
- Add about 1 1/2 cups canned black beans and 1/2 cup of the "taco water"
- Stir until absorbed
- Continue adding the "taco water" 1/2 cup at a time until it is all absorbed and rice is creamy (stir constantly)

The Mexican risotto looks delicious, what a unique recipe! Mango peach salsa sounds heavenly on it :)
